My fella and I stopped by Beehive Station on a whim for lunch yesterday afternoon. Neither of us had been there and we purposefully didn't look up any of the food carts beforehand. We wandered around the dozen or so carts, and I decided to try The Easy Otter based off their posted menu, knowing nothing else about them. Let me just say, I feel like I hit the "blind foodcart challenge" jackpot. I ordered the Oo-De-Lally with Cajun fries, and can confidently say it was probably the best chicken sandwich I've ever had. My fella ordered from another cart and was jealous he didn't order from TEO after trying both of our meals. We definitely want to come back on the weekend to try the chicken and waffles. The food cart owner was super sweet, too. Come try this food, people. Support delicious, local, unique, freshly made food. ?

I ate there for the first time today. I don't normally order chicken strips because they all seem the same to me. This place changed my mind on that. The chicken strips were cooked perfectly. So tender and moist. The breading was amazing and the portions were more than I could eat in one sitting (that never happens). The fries were hot and crispy as well. I'm not sure if the person who helped us was the owner or not, but whoever it was, they were amazing. I also don't write a lot of reviews, but I felt like this place was worth it.

Everything is excellent quality, so well made! The hand breaded Chicken sandwich is probably one of the best I've had, and I've had many of them! Highly recommend trying the garlic fries, and the slaw. Everything is fresh and made with love! Overall a great spot, definitely recommend giving this place a try!
Did a preorder/pick up and everything was amazing!! We got two of the Salmon Chowder specials with sous vide egg, tarragon cream cheese sauce & homemade pie crust, the My Cherry Amour beignets, and the boneless wings & fries. Deliciously rich, flavorsome, and so so filling!! It was definitely worth making a trip out in the light rain & cold with the family. So glad to have been able to try this wonderful food truck located in the Beehive Station!?

A few months ago we stopped by The Easy Otter on the way home from Washington to California. We just searched "chicken" in central Oregon. How lucky we were to land here!! While we live in another state, we will be stopping here every time we drive through Salem. We may even plan a road trip around getting chicken here. It's that good. I hope the owner is proud; they were a wonderful presence, both as a cook and the only person we interacted with in Salem.I wish I could give 6/5 stars. SO GOOD!!

Love love love this place. She has savory beignets on Sundays and they are so good. My son who is a chicken wing enthusiast was stoked to find wings here and they did not disappoint! Boneless and yet some of the crispiest flavorful wings we have ever had.

The chicken is so juicy and tender and cooked to perfection. The beignets are as good as I’ve had in New Orleans. If you haven’t tasted Lindsay’s good food you are missing out.
