Incredible, meticulously take care of, charming little Victorian getaway. Detail of thought the thought and care in every corner is truly amazing. Somebody that truly cares about the building and what they do. When I lived in Ireland, we live in an old Victorian home that was built in the early 1800s. This lovely little inn reminds me exactly of it. Book your stay and you’ll be very happy. And if you stay, please post a comment so other people stay here and there’s a little gem stays around for a long time so we can continue to come back. That is the responsibility of any happy customer to the business that provided the service. Please be a good guest in their home. David
There's nothing else quite like this in Gettysburg. Indoor dining is fine dining with white tablecloth, real candle tapers, your table set in a private alcove of period-perfect rooms like the library or den. The chef Karl is wonderful! This is an ideal place for a leisurely or romantic dinner. No fast food here. In the summer there is casual dining on the back deck. My favorite dishes are the salmon and the pasta with clam sauce. That is absolutely addictive!
Gettysburg is blessed with many restaurants for the size of its population but not so blessed that many of them cater to tourists. Tourists frequently are one-time customers so, what pleases a tourist might not please a local. We are locals.We have walked past a sandwich board sign for George's at the Swope and decided to take the plunge. The Swope is a B&B one block from the town's epicenter and is in and of itself and lovely architectural jewel bristling with history, charm and elegance. The manor along with a generously sized patio form the foot print of George's.My wife called to make a reservation at George's on a Wednesday night. Given the pandemic which has stifled small businesses and being a weekday night, diners are few and far between in Gettysburg.The chef had asked us to pick our appetizers and entrees beforehand and we selected Atlantic salmon, crab cakes, lamb chop and tuna. I am not a polished foodie so what you read is far from a restaurant review found in a culinary magazine. Karl (how the restaurant got to be called George's with Karl as its guiding spirit is for you to discover) told us to BYOB which we did. We had a table set in a corner that let me peek into the library which will become as per Karl's projection the bar. Our table was impeccably arranged and comfortable. Two of us had the Caprese salad as a starter and one, my wife, had Beet and Goat Cheese salad. Since we were with our close friends, they didn't mind that I picked up my spoon and sipped the remaining salad dressing from my caprese salad. Yes, it was that good. My wife ate her Beet and Goat Cheese Salad with a look of serene contentment but refrained from spooning up the remaining dressing.For entrees we had the Bistro Crab Cakes, Atlantic Salmon, Ahi Tuna Steak and New Zealand Lamb Chops. All dishes were superb and nothing was left on the plates. I had bistro slaw and calico beans and Karl brought us out a dish of Green Beans Almandine to try. None of us exercised the slightest amount of culinary restraint and all dishes were consumed in their entirety. Somewhat guiltily all portions were generous so we ate with our hearts ignoring our belt buckles.Our penance came in the fact that none of us could contemplate let alone eat dessert, so, dear reader, this discovery will await you. There are restaurants and there are restaurants in Gettysburg but if you want something special, try this one.
I'm a local and have been going to George's at The Swope every Sunday for the past few months. The food is fabulous! My "go to" items are the T-Bone Steak, Shrimp and Scallop Scampi with Squid Ink noodles, Chef Karl's famous crab cakes and the Caprese Salad. Everything is cooked to perfection and is fresh! The Caprese Salad is literally AMAZING. The tomatoes used are fresh and a lot of the herbs used in the dishes are grown in the Swope mini garden off the patio. So many wonderful entree's to choose from. You not only get a side salad accompanied by a homemade champagne vinaigrette, but two additional sides as well. There is plenty to choose from on the menu. Reservations are recommended. Excellent food and service.
We visited George’s at the Swope as part of the Savor Gettysburg Food Tour and were not disappointed. Chef Karl served us caprese salad and his test creation of crab cake stuffed shrimp. Both were AMAZING!! The food quality, presentation, and taste were all too notch! We look forward to a return trip where we can delve into the full menu and enjoy more of Chef Karl’s creations.
Hidden Gem! Backdrop is a scene to a secret garden. Service to the 9’s. Well worth our wait. Immediately felt like home when we were escorted back to our table in the courtyard. We came just in time for the most perfect fall weather, but a cozy nook inside during cold season would have hosted just the same. The menu was perfection and you can taste Chef Karl’s passion in his food. Rob was timely with all of our needs; we are so glad we avoided the tourist traps for our date night out in Gettysburg.
From the Bruschetta, to the Champagne dressing on the salad, and to the different entrees the 4 of us had, our meal was fabulous!! And Chef Carl and the rest of the staff took great effort to make our evening a wonderful visit! Highly recommend
I took my wife to the Swope Manor B&B for her birthday and made dinner reservation at George's at The Swope. Karl is a wonderful chef and made the candle lite dinner an amazing experience. Chef Karl and Pastry Chef Megan made my wife's birthday a very special evening. We will be returning often.

This was an amazing experience from start to finish. Chef Karl called us personally prior to our reservation to confirm and discuss meal options. You can tell that he is truly passionate about what he does. We were guests at the Swope, and when we came downstairs, Chef greeted us himself and walked us through the menu, explaining that most of his ingredients are locally sourced. Great care was taken in the food preparation and the meals were exquisite and filling. It is an experience that you should truly take your time to enjoy. If you are staying at the Swope, or visiting the area, I don't think that you'll find a better meal. One tip: the meal is BYOB, so make sure to pick up a great bottle of wine in the square prior to your visit.

I have dine several times with Chef Karl, he is a wonderful host! The ambiance is perfect for a romantic get away or for a cozy gathering with friends! Seating is limited and reservations are suggested, The food is always delicious!
We’ve been to George’s several times and always have a fantastic meal.my boyfriend worked with Chef Karl to plan the night of my dreams. We were decorated to The Library where a bottle of chilled champagne and a dozen roses had been placed on the piano. We had a Delicious 4 corse meal. I choose the cheese ravioli with a homemade vodka sauce and my fiancé had a strip steak topped with mushroom sauce that could compete with any top steak house. Chef Karl’s culinary flair turns ordinary side dishes into delicious works of art. The meal ended with decadent death by chocolate cake . I can’t put into words what an amazing night it was. The inn is breathtaking and the food could not be better. I suggest in making a reservation and if you reserve a table a day or so in advance a meal of your choice can be prepared for your group.
At the enthusiastic recommendation of good friends, we visited George’s on a beautiful September evening. We were welcomed warmly by Executive Chef Karl Held, who seated us on the inviting outdoor patio. The menu was surprisingly extensive for such a boutique restaurant, and we decided on the bruschetta as a starter, followed by lobster ravioli and crab-stuffed shrimp. Sides included fresh corn salad and perfectly sauteed spinach with garlic. Each dish was thoughtfully prepared - and delicious. Chef Karl not only took our order, but he waited on us throughout the evening. When he wasn’t busy cooking or plating, he engaged us in delightful conversation, sharing his tales of New York and elsewhere. We spent nearly 3 leisurely hours with him, never feeling rushed. The pricing was quite reasonable for such an exceptional dining experience, with the fact that the restaurant is still BYOB obviously influencing the bill total. We highly recommend George’s at The Swope when you want one of the best fine dining experiences in Gettysburg. We look forward to returning soon with our family and friends, and also plan to tap into Chef Karl’s private chef option in the future.
Our meal was extraordinary and very personable service. Executive Chef Karl Is fantastic. I had the filet which was cooked perfectly. My husband ordered the crab cakes. Our server, Jackie was very friendly and attentive. We shared wonderful conversation with both Chef and Jackie. We loved the atmosphere so much, we booked a room at The Swope at the end of our stay with another hotel and made a reservation for dinner as well. Highly recommend eating and staying here!
