The eight-course menu was absolutely delicious. Our regret was not starting with the wine pairing from the beginning. Halfway through, we realised the food was so good that it would have been a shame to have it without wine, so we added the pairing then. The wines themselves were not particularly outstanding tho. Additionally, there was a performance outside that was a bit too loud, which slightly disrupted the otherwise wonderful experience.

I tried their 5 course menu so the review is based on this experience alone: the dessert was absolutely amazing, every flavor and different textures go great together and taste amazing alone. But the rest was just meh. To be fair the ingredients were good and the chef put thought into the dishes. However the taste was just not as impressive. Not my cup of tea. Except from the dessert. If I ever go back it’s definitely because of the dessert. (Btw the restaurant is very low key and is a bit hard to find if you use google map. I suggest don’t go further since there was a crazy person harassing every passersby in the crossing nearby.)

Everything is great! All the food was amazing but specifically the first course of the tasting menu that is tuna tomato and peach was sooooooo good and beautiful dish that stood out for me from the rest.

We did 8-course tasting menu and were not impressed. The meals are somehow dull although the ingredients are interesting. Their younger brother Cadet does a better job at offering a palette of unique flavors.
We don’t eat dessert and they were graceful enough to remove the respective items from the menu. Thanks for being flexible!

I enjoyed a beautiful lunch at the new location of one my favourite Montreal restaurants. My wife and I chose the table d’hôte menu that offered an amuse bouche of an artfully presented oyster followed by a choice of soup or salad, a choice of main and a dessert. I opted for the chilled cucumber and mackerel soup and beef tartare with frisée salad. My wife had the beet and plum salad and the sea bream in a creamy corn sauce. The dessert was a light preparation of melon and summer fruits, olive oil cake and meringue. The espresso was the perfect end to the meal. We received a warm welcome on arrival even though we arrived an hour before our reservation. The service was excellent, as always.

2025 - Abbreviated Family Stay-cation - Quebec Food Craw
Destroyed by fire a year ago, this perennial local favourite resurrected from the ashes and reincarnated inside a new gorgeous and impressive, cavernous, bright and minimalistic-chic space, within walking distance from Montreal’s “ Place des Arts “.
A constant feature on the ‘100 Best Restaurant in Canada’ list, the food at this widely acclaimed, yet non-Michelin star establishment, is clearly star worthy! Offering modern eclectic cuisine with a French, Pan-Asian influence, our tasting menu was one of the most well-thought-out and well progressed meals we have encountered this year. Intensity and depth of the taste profile increases with each and every dish. A few bursting with surprisingly delicious, mind boggling taste sensation using only simple and ordinary ingredients like tomato, carrots and cucumbers! Although multiple taste and textural components were incorporated in most dishes, non-clashing and harmonious balance were achieved in all cases. A truly amazing feat by a talented kitchen led by a creative chef!
Our first meal on this abbreviated, ‘staycation’ culinary odyssey definitely started off on the right foot.
The flexible and diverse menu offered both ALC as well as a couple of multi-courses tasting menu options. Compared to similar outfits in Toronto, one definitely gets a bigger bang for the buck at this La Belle Province institution.
Our party of six famished foodies all settled for the 8 course tasting menu. The dishes are:
TUNA - tomato - peach - lavage
CARROT - apricot - dukkah - marjoram
DUCK( Tartar ) - horseradish - strawberries -foie gras
CHAWANMUSHI - lobster - guanciele - daikon
RAVIOLI - green peas - anchovies - pistachios - garlic scapes
QUAIL - endives - foie gras - hazelnuts
CUCUMBER - yogurt - lime - mint
CHOCOLATE - caramel - coffee - sesame
Stand out dishes include the Tuna, Carrot and Cucumber creations. All refreshing, complex, multi-layered and bursting with flavour. However, without question, the hands-down star of the meal has to be that amazing Chawanmushi. Simply out-of-this-world delish! The ultra-condensed, lobster and seafood flavour packed velvety cream was a taste of umami heaven in every spoon. Sooo good! Definitely a candidate for the ‘ best tasting dish ‘ of the year!
Lastly, if one has to be super-critical and picky, trying to squeeze out something negative from the meal, then, I have to say, maybe the superfluous hazelnut bits accompanying the quail. But then it's almost like trying to pick a bone fragment from an egg dish…..a preposterous scenario!

A truly unforgettable experience! Credit to the front of house and kitchen teams alike. Party of 5 adults eating the 5 and 8 course tasting menus, with discovery and traditional wine pairings. Each course was delicious and well presented. Staff were extremely welcoming and knowledgeable about dishes/ingredients/wines. The atmosphere was classy. Some of the wine pairings were, shall we say, adventurous! Well done Buillon Bilk, we look forward to dining with you again!

Bouillon Bilk is a true gem in Montreal. From the moment you walk in, you’re struck by the sleek, understated atmosphere that puts all the focus on the food. Every dish is a surprise, with bold flavor combinations that somehow just work beautifully. It’s both refined and comforting. The service is warm and attentive without being overbearing, which makes the whole experience even more enjoyable. It’s the perfect spot for a special dinner or simply to treat yourself to some seriously good food. In short, a must-visit for any food lover in Montreal.
The experience was great, the food was good but also not extremely memorable like wow I need this, I want it, I got to have it in my mouth again vibes.
