A truly unforgettable experience! Credit to the front of house and kitchen teams alike. Party of 5 adults eating the 5 and 8 course tasting menus, with discovery and traditional wine pairings. Each course was delicious and well presented. Staff were extremely welcoming and knowledgeable about dishes/ingredients/wines. The atmosphere was classy. Some of the wine pairings were, shall we say, adventurous! Well done Buillon Bilk, we look forward to dining with you again!

Bouillon Bilk is a true gem in Montreal. From the moment you walk in, you’re struck by the sleek, understated atmosphere that puts all the focus on the food. Every dish is a surprise, with bold flavor combinations that somehow just work beautifully. It’s both refined and comforting. The service is warm and attentive without being overbearing, which makes the whole experience even more enjoyable. It’s the perfect spot for a special dinner or simply to treat yourself to some seriously good food. In short, a must-visit for any food lover in Montreal.
The experience was great, the food was good but also not extremely memorable like wow I need this, I want it, I got to have it in my mouth again vibes.
It’s moved to this new location and atmosphere has drastically improved. Still serving the same good food.

I dined here on Sunday, May 25th during a recent visit to Montreal. I thought the food was executed very well. Almost perfect. Would have like to have seen a little more creativity and pushing the envelope, but there's never anything wrong with keeping it simple and executing it perfectly. I just wasn't really wowed by anything I had...apart from the foams and broths. The front of house service however, leaves VERY little to be desired. There were multiple times between courses where my guest and I were waiting for silverware as our food sat on the table. Also I had gotten up to use the bathroom and expected to find my napkin folded over my chair like most fine dining establishments, that was not the case. And in the most infuriating example, when my guest was looking for a white wine and wanted the white burgundy, the server repeated said that was more expensive. I'm having an 8 course tasting, I know how much the wine is, and I don't care. I've dined in many fine dining establishments, for work, academia, and pleasure. All-in-all, I think the food is great, but everything else is mid...I don't think I'll be returning, nor will I suggest this place to anyone else.

We booked a table ahead. We were a group of three.
We all ordered the 8 course tasting menu. I also ordered the 7 discovery pairings. The 8 course tasting menu was supposed to be for people who came after 8pm but they made it available for us even though we were there quite early (5.30pm).
Absolutely loved each course! They all have rich flavors. The mushrooms were really tasty, with the right amount of crispy. Among the first five courses, scallop and quail were my favorite. For dessert, the cucumber ice cream was really refreshing. Definitely recommend! For the discovery tasting, I love the last ice cider the best. Fruity flavor but not too sweet. Perfect balance
I absolutely loved their tasting menu and wine pairings. The service is formidable. The atmosphere is great. And Definitely worth it for a fine dining experience.

one of the best high-end restaurants in montreal hands down !! their menu changes once in a while, so if you go there after a while, you get to taste something different. my favourite was the foie gras and oysters. The foie gras was really really refreshing and it’s hard to describe the taste with simple words. It’s layered with flavours of leek, apple, radish and at last the rich flavour of foie gras, making it a very special dish. And the oysters itself was average, but with the sauces it comes with, another level.. The white soy especially really brings out the freshness of the oysters and gives it a kick too. The scallops looked like it wouldn’t be enough, but for an average girl, it’s definitely more than enough. my friends got the fish and ravioli, they’re both great, but the appetisers were what surprised me the most.10/10

I ordered the Rabit Pasta and it was delicious! Pleasant combination of flavors.
Staff are very nice and professional and they explain everything to you.
They have a wide variety of wines and cocktails.
And the atmosphere is very modern and nice.
Walked in, had the tasting menu at the bar. Amuse bouche was extra, would skip it next time.
The food was incredible. Highly recommend.
