Went for sushi but was informed 30 minutes after we arrived that the sushi bar was closed. Service was off a little.

Came in for a birthday dinner and left very satisfied.

Drinks came fast and we're very reasonably priced. Food was really good. Steaks were perfectly cooked to our liking. Waiter and busboy were very friendly and entertaining.
Will definitely be back.

Choix de cocktails et de vins très satisfaisants. Nourriture excellente. Service professionnel et aimable. Menu intéressant offrant un choix de plusieurs mets. Pas très bruyant. C'est un endroit où on a toujours envie de retourner.

Prime rib was great. Garlic mashed potatoes were great. Caesar salad was dry (maybe they left out the Caesar salad dressing?). Service was good at the start, but then became quite slow as the restaurant filled up.

I’ll get to the food in a bit, but first I’d like to talk about the service.

I believe anyone can be a waiter. Anyone can bring the food to your table, fill your water, check in to make sure you’re doing fine. These are the basics and any half-caring waiter could achieve. What is difficult is the charisma. Being able to make your guest laugh while also knowing when to give them space, to have such a knowledge of the menu to describe sauces as “to die for” and be correct.

Let me introduce you to Raph. A brilliant waiter whose humour and ability to read the mood elevated the meal to a place a chef cannot take it. These are skills that separate the regular chains to the restaurants that you reserve to celebrate. Raph, if you’re reading this, thank you for the amazing service.

My partner and I celebrated our 3 year anniversary here! This is what we ordered

The VIP Platter for 2: incredible, if you’re going with someone who doesn’t mind sharing, this is perfect for you. The peanut butter jam was my highlight

The 12oz Filet Mignon: Our waiter suggested the “Dion” sauce. Amazing, no notes, cooked perfectly, absolutely get the Dion sauce and garden salad.

The Creation Sushi plate: another banger, each bite unique and REAL GINGER!! Which is always a nice touch.

My partner got a Dirty Martini and I a simple gin and tonic, both delicious.

To end our meal, we each had an espresso, a perfect way to end a lovely experience.

Including Tax and Tip, our total was around 250$ (worth it)

Some smaller notes. It really irks me when you ask for a takeout box and the service will make you pack your own, Vargas avoided this which my partner and I really appreciated.

All in All, a wonderful experience. Will for sure be returning for other big celebrations.

Was a little bit disappointed with my gin martini because too much glass to the lips did not like it. It felt like a dessert glass The food was very good.

We told them we were allergic to peanuts and they still brought some!! Literally could of killed one of us. Sushi were extremely simple and unsavory while the food portion were small and underwhelming.

This is a hidden gem in Montreal. When you think of Vargas it doesn’t ring a bell as a talked about restaurant. However, it’s twice I go to this restaurant for business suppers and its honesty amazing. The entrees are more on the expensive side however, the size of the entree is huge! It’s so worth it. Go to Moretti and the same style of entree is the same price and it is half the portion. Now in terms of quality the food was fantastic! My colleagues and I will definitely go back. If you work downtown you need to go! I’d suggest sitting on the side of the bar since it’s renovated.

Had a very great evening at Vargas. Nice vibes and environment. Food was fresh and delicious I definitely recommend the salmon tartare as an entree. Tamara gave us a great service!

Went for lunch and got the prime rib, it was flavourless… service was extremely slow, we waited for 45 minutes before getting our orders… the only highlight was the lemon yuzu trompe l’oeil.

The food was delicious. I had the 8oz filet mignon with peppercorn sauce. It was cooked just right, and it was tender and very tasty. My wife had the organic salmon meal with deep-fried cauliflower. The salmon was fresh and cooked just right with a delicious mango sauce. Personally, I don’t like anything deep-fried. Perhaps, the chef should consider another method to cooking the cauliflower. My friend had the roast beef. Unfortunately, it was not tender. The roast beef should be almost melt-in-mouth tender, and could have had more spice… Otherwise, I would definitely recommend this restaurant. Our waiter Christo, was very friendly, knowledgeable, professional, attentive.
