Raw Lab bills itself as a “next-generation Raw Bar” with an omakase-style experience in a semi-private setting. At $600 for two, one would expect a fine dining experience. Instead, our visit was a letdown, plagued by disjointed flavors, inconsistent service, and a lack of precision.

While some ingredients, like the oysters, were fresh, the dishes lacked cohesion and personality. Ingredients like store-bought Terra chips felt out of place in what was supposed to be an elevated meal. Rather than a carefully curated progression, the courses felt random, unbalanced and lacking execution.

Service was another disappointment. Drink orders were forgotten, flatware was missing, and plates from previous courses remained long after new ones arrived. I tipped extra as our waitress was polite and trying her best, but she was clearly overwhelmed.

If you enjoy a long (4 hours), booze-heavy meal, you might have fun. But for those expecting a meal that highlights marine ingredients with, thoughtful execution and seamless service, Raw Lab overpromises and underdelivers. A lively vibe and charismatic chef can’t compensate for a lack of harmony on the plate and polish in service.

I think I got food poisoning here. I’m local and the seafood definitely wasn’t. Shady slick management from someplace else couldn’t even identify their procurement sources for my doctor.

Truly an experience unlike any other. From the caviar pairings, the variety of mignonettes & wines from all over the world, the learning experience behind each & every course - it’s as if Kevin has put you & 11 strangers on a rollercoaster that he somehow is navigating for hours. Never having tried caviar before, I’m so happy this place was my first. The amount you learn in just this experience alone is worth the price in my opinion. Not to mention Kevin’s got the best music selection on this side of the Mississippi. Put Raw Lab on your bucket list, you won’t regret it!

What an amazing experience. This was our 2nd time at Raw Lab and it blew our minds once again. The food is out of this world and nothing like we have had before. If your visiting for out of town or just looking for a great date night you must come here.

I took my wife to Raw Lab in downtown Charleston for her birthday, and it was an absolutely phenomenal experience. I don’t like seafood—at all—but this meal changed everything. From the first dish, I was blown away by flavors I never expected to enjoy, like tomatoes and pickled vegetables. The chef’s expertise and passion were evident in every bite, teaching us how to truly savor each dish. It wasn’t just a meal; it was an experience. I believe this place deserves a Michelin star—at the very least. Worth every penny!

### Long Review:

For my wife’s birthday, we decided to dine at Raw Lab in downtown Charleston—a decision I initially dreaded because I don’t like seafood. In fact, seafood and I don’t get along at all. So, you can imagine my hesitation when she mentioned this restaurant. But from the moment we sat down, I knew we were in for something special.

The first dish that arrived had pickled vegetables—things I normally wouldn't touch, let alone enjoy. But to my surprise, every bite was a revelation. The standout for me was the tomato, a food I typically avoid. But this tomato was unlike any I’ve ever tasted—so delicious that if all tomatoes were like this, they’d be at the top of my favorites list rather than the bottom.

What really set Raw Lab apart was the entire experience. It wasn’t just about the food; it was about how the food was presented, the atmosphere, and the chef's incredible ability to guide us through each dish. There was music, a bit of theater, and an overwhelming sense that we were part of something extraordinary. The chef didn’t just serve us; he taught us. He explained how to eat caviar, letting it dissolve on the tip of your tongue, and how to appreciate an oyster as you would a fine wine, letting your mouth savor the flavors before taking a sip.

The way he controlled the kitchen and interacted with us made the experience even more unique. It was clear that this wasn’t just a meal—it was a masterclass in culinary appreciation.

By the end of the evening, I was convinced that Raw Lab deserves a Michelin star. This restaurant needs to be on everyone’s radar. I’m planning to share my experience with influencers and people I know because the world needs to know about this place. Every dollar spent was worth it—a sentiment I didn’t expect to feel going in but one that I wholeheartedly believe now.

Raw Lab isn’t just a restaurant; it’s an experience that leaves a lasting impression, and I can’t recommend it enough.

This was the second time my husband and I have come to this experience and both times have been to celebrate my birthday because it’s just that incredible.

Last time we came was two years ago and the experience has completely evolved and only gotten better, but also had the same familiar atmosphere and fun execution, which is part of the magic of this place.

One thousand percent worth the price. You will leave feeling full, have had plenty to drink with a variety of wines you’d never be able to pick for yourself elsewhere, and leave with new knowledge and appreciation of marine cuisine every time. As a native to Charleston, I’m so grateful this guy opened his unique concept here. Can’t wait to bring friends with us next time!

From the moment you arrive at The Raw Lab your experience starts and it just gets better and better…
After a very warm welcoming we were walked into the restaurant and seated at the bar that looked like nothing else.
Our Chef Kevin was so welcoming, friendly and knowledgeable taking the time to explain everything . He is a chef, a comedian and an artist all in one!
The food was not only delicious, but perfectly presented and the menu is creatively put together. His original atmosphere can't be faulted, our experience was beyond excellent.
Your dishes all comes to the bar in unison and each dish is explained.
If you are visiting Chs or a local and want a memorable dining experience then The Raw Lab is sure to deliver! Well with the price!

From the time you enter the building to the time you walk out you're completely entranced. Kevin builds out an experience like no other and changes the way you look at food.

Guys. GUYS! When I say you need to go here immediately, I mean you need to go here immediately! I’ve had the wonderful opportunity to eat at spectacular restaurants in my life, and Raw Lab is top three of my most cherished experiences culinarily of all time. Kevin is amazing both as a host and chef. His passion for what he presents is only surpassed by the dishes he creates. The attention to detail, and I mean every single detail, is so perfectly executed, and it was a dining experience I will never forget! Amazing evening. Spectacular food. 10 ⭐️s

Be ready to meet this experience on its’ level, open-mindedness is key to an unforgettable night. It’s educational without being pretentious, upscale without being snooty, and well worth the money. It’s not about ultra rich old world cuisine, rather it’s fresh takes on some incredible local flavors while helping you to understand what makes each moment special. If you can get a seat, get one. It’s always a pleasure to watch an expert practice their craft and the entire party of strangers were singing and dancing as we settled our bills.

I LOVE raw food so that was not my issue. My issue was that the cook/ owner is an oyster shucker with no culinary background and I just think it showed. I left hungry, at that price I absolutely should not have left hungry. Four courses are just an oyster, one oyster. I have been to japanese omakase in San Fran at half the price and have to ask to tap out usually! Yes, one course might be a slice of nigiri but this is normally balanced out with so much rice in the other courses. And I don’t even care if I leave hungry if the dishes wowed me, but his sashimi cuts were chewy, and his ceviche is like a ceviche google recipe, I had tiny shells in my bisque that were not strained out… I didn’t expect Michelin quality, but I expected better for the price tag. It was definitely fun I fully admit that, but you pay for the fun, not the food. I found him to be very light handed with his wine pours, he told us he would refill our glasses if we put them up but he mostly did not, he opens one bottle per course for 12 people, that’s 1/3 a cup of wine per course, which is 6 glasses of wine over 4 hours.
