We were in Johnson City a few weeks ago and had the foresight to make reservations at Timber! Now we can’t get the place out of our heads. Blame the butternut squash soup. It’s the kind of bowl that resets your compass. It was robust, earthy, and layered. One spoonful and I knew I was ruined for other soups. We live far away; that’s the tragedy. This soup still lives rent-free in my head.

We ran the table with small, medium, and one large plate. Each was built by someone who respects ingredients, heat, time, and seasoning. The textures snapped together like a well-built puzzle. The room itself was large, but shoulder-to-shoulder and loud, and that’s fine by me. I didn’t want a library. I wanted a place where the staff and kitchen worked like they meant it.

The drinks weren’t decoration; they pulled their own weight. The bar knew its business. We told them what we liked, and they steered with confidence. The service had that rare combination of ease and intent: plates landed hot, nobody explained the obvious, and nobody disappeared. Exactly what a restaurant should strive for.

We left full, and then spent the next few weeks lamenting a simple fact: we may never have a bowl of butternut squash soup this good again, not without a plane ticket.

If you’re anywhere near Johnson City, go. Book a table. Let the kitchen talk. That soup will follow you home.

Small dining area but excellent food. Reservations a must to get a table. We went on Tuesday and were surprised at how busy it was. The wedge salad was fantastic as was the fried chicken.

Anyone who leaves less than 5 stars must own a competitive restaurant.
The corn ribs, the beets, the cauliflower, the popcorn chicken, the catfish, the smores ice cream….EVERY SINGLE DISH MAKES ME THINK I’VE BEEN EATING TRASH MY ENTIRE LIFE AND THIS IS THE ONLY REAL FOOD

The drinks, the service , the ambience, every single other aspect is always on point too.

Please, fly here from CA or NY or even Japan.

Eschew any Michelin restaurants.

This place is wonderful! It appears a little modest but the experience and food is outstanding. The service by Hannah 'Hank' was great. Everyone was attentive and made drink recommendations to pair with our food. I highly recommend!!

Interesting menu but unfortunately three of the four dishes were not good, either over spiced or way too much sugar/honey. The burger is excellent. I don’t recommend. Service and atmosphere nice.

Good restaurant with a great atmosphere. Very unique for the Tri-Cities and I like that. Feels very much like an Asheville type restaurant. I do wish they had a more expansive beer list. Johnson City is a great little beer city and there is a lot that can be taken advantage of here locally.
