We were just passing thru Knoxville, needed a good coffee and as luck would have it, Paysan was next door. Probably the best bagel I’ve ever had. Amazing !

I usually have a great experience here but today I got a bacon egg and cheese with avocado and they gave me a rotten avocado. I had to scrape it off and it was a waste of $2 extra for brown avocado.

I have been wanting to try Paysan for a while, so I stopped there this morning and was disappointed. The bagel was good, but when I got there they said it was a 30 minute wait, so I was prepared to wait 30 minutes. I ended up waiting 45 minutes just for my order to be wrong. I didn’t say anything because I wasn’t willing to wait 45 more minutes. Overall, just not worth it.

Stopped here today while getting coffee next door. Got the flower power sandwich and oh my gosh, it was absolutely amazing. Easily one of the best sandwiches I've ever had. They gave me the wrong kind of bagel but thats ok, it was so good I wasn't even mad. I was going to get the one with avocado & tomato, and asked if I could get egg on it and they were going to charge $3 for an egg which was kind of crazy. But I definitely want to go back and try some of the other bagel flavors!

This is one of my new favorite places to go. The Asiago and scallion cream cheese bagel? Chefs kiss. Also had the BLT last time and it hit the spot. It’s not a sit down establishment, so you order at the window, but you can take your food next door to Remedy Coffee and grab a drink. Ultimate duo! Highly recommend.

Good bagels but not New York Bagel good. Especially for the price paid, it should’ve been better. The variety is limited. Parking is nearly impossible anywhere near there. They have no place to sit and eat except two picnic tables a concrete patio. Too hippy and progressive for my liking too.
