Coffee
Decaf Aguacate
Decaf is often viewed as caffeinated coffee's slightly worse relative that's really just there for those days that you need a seventh cup of coffee, but you don't want your heart to actually burst out of your chest. El aguacate is here to change that tale. It begins as a delightful crop of green coffee from the Marino region of Colombia, which is then submerged in a solution of ethyl acetate and soaked. Ethyl acetate is made up of ethanol [alcohol naturally derived from sugar cane] and acetic acid [white vinegar] and is able to adhere to the caffeine molecules in green coffee and extract them from the bean. The green coffee is then washed and shipped to Nashville where we roast it into tropical, syrupy sweet glory. The ethyl acetate process not only naturally removes a majority of the caffeine from the green coffee, it enhances the sweet fruit qualities already present in the beans. This produced a finished product so delicious, some of us drink it all day.
Tres Banderas Blend
The tres Banderas "3 flags" hail from three different countries: Brazil, Ecuador and Colombia. We tried something a little different with this blend by balancing the sweet chocolatey body of the sertão with the tartness and crisp acidity of Los romerillos. Los Rosales adds a bit more intrigued with unique - yet subtle - spiciness and floral qualities. The result is a tremendously well-balanced blend with hints of ripe fruits while maintaining the fuller body you may be craving. As always, we roast this blend a little differently than our other coffees, developing the sweet sugars that produce a balanced, full-bodied coffee that can be served either as espresso or filter coffee.

Rosales, Colombia
Let's be honest, if all of us were living by the ocean, we'd probably all be a bit more balanced, approachable, and all-around sweet. So we can't blame Rosales, our newest coffee from the nariño region of Colombia, for attributing its proximity to the pacific ocean for its sweet and balanced qualities. The region's cool nights and warm days slow down the coffee's maturation, allowing Rosales to achieve its distinct sweetness. And let's not forget the roses that give this coffee its name - they're planted throughout the farms, contributing the loveliest floral and herbal notes. The rich texture of dates, bright citrus of lemon, and complex sweetness of brown sugar come together harmoniously in this fully washed Colombian coffee. We can assure you that Rosales will please you almost as much as a day in an oceanside rose garden. We cannot actually guarantee anything, but we do love this coffee.
Paloma Blend
"paloma" means dove--an oft referred to symbol of peace. This blend brings the sweet grapey Los romerillos from Ecuador to join lemon-bright Rosales from Colombia for a balanced coffee that emanates gentle harmony. Los romerillos was grown in the eastern mountains of Ecuador and Rosales was grown near coastal Colombia--topographies that bring a wide range of inherent qualities. By combining the two, Paloma has the flexibility to work well on any number of brew methods. Our education lead tom tried it six different ways and each one brought out new complexities ranging from pear to kiwi to honeysuckle without losing a consistent and round sweetness. A veritable cup of peace--two coffees with a kaleidoscope of flavors coming together to find common ground and make one another shine brighter.

El Locho, El Salvador
The Menendez farm is a family affair run by don Miguel and his two sons Miguel and Guillermo--it was passed down to don Miguel from his father's father. It's a farm built by folks who walk their land in the half-light of early morning, to prune coffee plants. Coffee from the Menendez's is grown in soil tended by generations of intentionality.
San Judas, Nicaragua
Producer norman ramón language gonsáles' father has been a coffee producer since 1960. Norman followed in his father's footsteps in 2000 and purchased his first piece of land--finca san judas. The location had a perfect climate for coffee, but the farm and land itself needed a great deal of work, which norman threw himself into with passion. Since norman moved onto the farm, he has planted higher quality varietals of coffee and worked to make gradual improvements to the farm overall, while producing final crops that got better and better each year. San judas is testament to the years norman has spent investing in quality. It's a fully washed coffee, mostly made up of the hearty caturra--one of the varietals norman has worked to plant all over his land. The result is a delicate, floral coffee with a mellow Mandarin orange acidity, a rich nougaty body, and the tart deep sweetness of golden raisins. San judas is delightful and easy to drink, but we recommend drinking it mindfully--see if you can taste all the nuance made possible by norman's dedicated work. Tasting notes: Mandarin orange, nougat, golden raisin.
Gedeb Gobu, Ethiopia
Helena georgalis is at the helm of moplaco--an exporter of high grade ehtiopian coffee that her father started in 1972. the primary concerns of moplaco are quality and sustainability. Gedeb gobu is an offering of theirs, gathered from small farms in the gedeb region of gedeo in ethiopia. Coffee brought to mapalco is sorted, washed, then fermented for 36 hours before being sundried on raised beds. Helena is known for coffees that are exceptionally clean, tart, and vibrant, and gedeb gobu does not disappoint. It's the beautiful result of the intensive and attentive labor of hundreds of local farmers and dedicated producers who work to complete the processing. Gedeb gobu is full of bright raspberry acidity, the woody spice of ginger, and the deep sweetness of sugar cane to round it all out. it's a coffee we want in our cups again and again. Tasting notes raspberry, ginger, sugar cane.
Suke Uraga, Ethiopia
Suke Uraga hails from the Guji zone in Ethiopia--an area that produces some of the most mouth-watering coffee in the world. This particular coffee was collected and produced by the registered exporter SNAP. Coffee from SNAP is grown by several regional farmers and once it's in the hands of the exporter, its final processing is overseen by Negusse Rebels, who owns and operates the mills. Negus is an accomplished commodity coffee producer with a team that knows what makes specialty coffees really shine. SNAP is determined to produce high quality and sustainable coffee and they use a lot of their resources to continually educate themselves and the farmers they work within sustainable practices. Suke Uraga is a coffee brought to you through the intentional effort of many folks, and we are grateful to taste the fruit of that labor. It tastes like a cup of tropical summer, with notes of watermelon, tart lime, and the subtle syrupy sweetness of honey. We'll be sipping it hot or over ice for as long as we can. Such a cute little spot! Crema was one of our top two coffee spots while visiting for the week (we tried like 10 local spots!). The coffee was great — and I’m PICKY when it comes to coffee. Super flavorful, wonderful ratios in the lattes, we would definitely come again!
