Lau by Kolben has so much potential to be a TOP contender for hotpot in the Arlington/GP area. But sadly fall short because of the short staff, labor issues. Every time I eat here, they do not have enough staff on shift to man the slicing of hot pot meats, refilling the self service station (veggies and add-ons), cleaning and setting up of tables, refilling and checking up on guest for beverages and hot pot refills. PLEASE hire more people to run this establishment. I’m starting to believe this restaurant is a front, and not an actual restaurant designed for customers to enjoy and be loyal to.
The positives I can mention is the dessert selection is unique here, all Vietnamese style Che and usually watermelon too (today it was not cut because I assume they don’t have the labor/people to cut it and place it into the fridge…. The soup bases are all unique and pretty tasty and so is the sauce bar selection. But because of the constant short staff, they are never able to handle even the slightest volume of customer, having to flag down the staff (singular) and practically hound the ONE server there for everything to be refilled or handled, thus being them down significantly in my book…

First time going to an AYCE lau restaurant. The atmosphere of the restaurant was really cool. They tried to make it as if you are in Vietnam. The food was decent and I enjoyed the tom yum broth I ordered. There’s also a fridge with che (Vietnamese dessert) that was a nice surprise. I’d say I’ve had better hot pot experiences elsewhere, but I liked the Vietnamese flavors and ingredients they had here.

First time and last time too
The food was not good and the soup was so sweet
And every time I need something I had to call them over for water ,spoons, or napkins. But it got to the point where it was too much so I had to get it from another table. Thin slices of meat and only 3 per tray. Also $29.99 per person and you have to pay $10 extra to change your soup. Vegetables aren’t fresh either and theres not much variety. I would recommend going to another place.

Pot take forever to boil no wonder very low rating!
The food was not that bad however, The area was dirty. The table had dirty bowls for us to use, and the iPads that they were using was also dirty. The restrooms were not clean. Ambience was not all that but The staff was friendly and helpful

With limited representation of hotpot, lau, or shabu shabu culture in the Arlington area, Kolben Food Court deserves recognition and applause for offering a convenient individual AYCE (All You Can Eat) style hotpot. The menu features a unique variety of Southeast Asian flavors and produce options, making it a refreshing dining experience.

Im not usually review on google , but i have to say that at the first time came here i was so supprised about their server, she's soooo niceeee , and so pretty as well , her name is Jenny if i remember correctly, she recommended for us everything about hotpot, i came here with my friends for the first time but i was shock about the food , it's call tomyum? So good. I'll be back here for many times to see my new friend ? i've read old review about hotpot services but luckily i didnt have the same experience ? So highly recommended you guys come here to eat hotpot and hopefully guys can see the pretty server here ❤️

I usually never write reviews but this is my first time experiencing something so ridiculous at a dining establishment. So i had no choice but to leave a review. The service was HORRIBLE. A girl served us, and it seems like she didn’t even care about us. She didn’t bother to check in on our table. When she took our order, it took a very long time to come out, I thought she had forgotten our order. Our table wanted to order more food but we couldn’t find our server anywhere. We had to ring the bell to get her attention but she was still no where to found. Whenever we saw our server, she would be on her phone. I was dumbfounded by this. The meat is also horribly thin sliced. It evaporated with the soup broth. Our meat looks like a previous table’s left over and they just put it back and served it to us. The tray where we grab our toppings was ridiculously dirty. But overall, the atmosphere of the restaurant was quite pleasant. I just hope they train the server again to ensure a better dining experience for customers.
