I have to admit, the reviews I'd read beforehand about the queue unnerved me. But we arrived at noon on a warm and sunny Saturday, and though it did take about 90 minutes before we reached the counter to order, I can honestly say the time passed smoothly (Bring your Kindle!). The staff is very good at giving regular updates about the remaining food quantity, and there are bathrooms and a café you can use during the wait. Now on to the food - as a couple, we tried to get a little bit of everything: brisket, beef rib, pork belly, chicken, lamb. We thoroughly enjoyed everything, with the beef rib being the standout. Inside was clean and the staff were very professional and helpful. It was the perfect first glimpse into the Austin barbecue experience, and we would highly recommend to anyone who may have been on the fence like we were!

Food was alright. Definitely overhyped. I came for the brisket but left disappointed. I’ve had better brisket at Rudy’s. The tacos, however were good and I would get them again. The sides were alright but considering that the entrees are smoked I don’t see why the sides also need a smoky flavor, kind of overpowers it. Not worth the long wait imo

Out-of-this World BBQ experience. After a two-hour wait, I got into the brisket taco, lamb taco, beef rib, peach tea pork belly, and jalapeño sausage. I grabbed a side of gouda mac & cheese. The brisket is phenomenal. Perfect bark and bite. The lamb taco was was a better taco. The tortilla was fresh and delicious. The peach tea glazed pork belly melts in your mouth; peach flavor shines through with a nicely balanced sweetness. The jalapeño sausage was the weakest link; delightful flavor, but a smidgen over cooked. The beef rib is perfect in every way. Beautifully rendered fat under a dark, briny bark. The chimichurri's garlic bite and freshness offered a nice counterpoint. Lovely, rich gouda mac was too much to handle. I sampled the regular sauce, vinegar, and mustard; all three are on point. Get here early. You're going to love it.

Wanted to try this place specifically for the pork belly. Wasn't disappointed. Best I've ever had. You would assume it would be super sweet but was perfect. Brisket was a little dry but did have good flavor. Turkey was good but not great. Jalapeño sausage was excellent first time I've seen cheese actually come out of a sausage. The sides were super different but we're all great. I'd recommend get the single size it's enough for 2 and try whatever you like. Jalapeño slaw, scallop potatoes and cilantro cream corn were all great. We got there an hour before it opened and we were eating about an hour after it opened. Not horrible for a restaurant that has a Michelin star. Banana pudding dessert was great. Staff were all great.

Showed up around 11:30am couple Thursdays ago, waited in line about 45 min. Things ran out kinda quick, so we ended up ordering pork ribs and pork belly only-but, both were delicious. I would personally not need the extra peach glaze on pork belly, but all was delicious. The slaw & potato sides weren't personally my favorite, but the meats were def worth the wait! We will be back.

Giving you 5 stars for what I expect but writing this review to warn people you do take a summer break from August 4th to August 12th. (I did drive across town finally today to taste you.). I don’t begrudge you time off but I only checked google not the Instagram page. So I’ll try again soon!
