The broth was incredibly flavorful and the tofu was fried to perfection. I’m not a big pho person, and I couldn’t get enough of it!! Highly recommend!
We go to Saigon Le Vendeur a lot so we figured we’d try this place out. Food and service were good for your typical Viet fast food joint.
However I could not get over the smell of their cleaning product. It was strong for the whole meal, which is weird because I thought I’d get used to the smell.

Fun, trendy interior with plenty of seating. I was a little disappointed to see how empty it was on a weekend around lunch time.
The pho broth is delightfully beefy and I like how they use the thicker noodles here. It was also nice to see that they use Thai chilis for the pho instead of jalapenos here. The portion sizes, for the most part, are great. However-- I feel like the spring rolls are a bit on the pricey side ($9 for 2 spring rolls). I do, however, appreciate that their spring rolls are not 95% noodles. I like how Le Bleu has vegetarian options that felt satisfying to eat.
Shout out to whoever's playlist was playing. They have great taste.
I wouldn't say it's my favorite spot for Vietnamese food. I did enjoy my experience here, so I will be coming back to try more things on the menu.

Delicious but not authentic. Overpriced gentrified Austin costs. Great cocktails.

Stopped in for a quick snack with a friend. We had the chicken pho, bahn mi and some roasted corn ribs. Everything was yummy and they split the portions for us. Which was perfect. Will be back.

You must get their octopus skewers! It’s a little pricey and came with 3 of them but the tentacles were crispy and the body was juicy and slightly sour with the sauce! I might come back just for that. I also tried the salt and pepper shrimp which was good and their OG banh mi. I like the pate that was in it.

Le Bleu was an unexpected surprise. Usually I can’t get through a bowl of Pho because though tasty, the flavor is just too much. However the Pho here was more mild and kept improving with each bite. Nice clean ingredients. Solid spring rolls and delicious shrimp skewers!

When Le Bleu opened I thought it was one of the best Pho bowls in town. It is steadily regressed on each following visit. I assume it is due to food prices, but the quality of the broth and ingredients is just not where it was a year ago.

Tried this place for the first time, and overall, it was a mixed experience. We ordered the grilled vermicelli bowl, fried egg rolls, and the summer rolls (Nem Nuong). While the vermicelli bowl and egg rolls were excellent, with good portion sizes and flavor, the summer rolls were disappointing.
The rolls were very small and pre-cut, leaving us with four end pieces. Each piece had about two inches of a thin slice of meat that looked more like char siu pork than grilled pork, as advertised. The rest of the roll was filled with noodles and standard veggies like bean sprouts. Given that most Vietnamese places offer two full rolls per order, the $9 price felt steep for what we received. You can check the posted photos for size comparisons.
In total, these two appetizers and the entree came to about $35 before tip, which felt a bit pricey for the order we places especially the summer rolls. If I'm in the area again, I'd come back for the vermicelli bowl and to try out the banh mi and banh xeo next time.

I love LE BLEU. Delicious food, good service, ample portions. Last night's satisfying dinner was BÁNH MÌ with grilled pork, SALT-N-PEPPER SHRIMP and Cà Ri Chay with very tender chicken. Waitress knew of my penchant for condiments and served various hot sauces. Spicy Tamarind Whiskey Sour was nice, too. Easy parking. Reasonable prices. Highly recommended.
