We had the chicken and chorizo paella as well as the shrimp and mussel paella, and they were both FANTASTIC! This has yo be some of the best paella I've ever had. HIGHLY RECOMMEND!!

Papa Paella was a huge hit at our party this pack weekend! Chef Homero was great to work with and so kind!! All of our guests loved the food! Would recommend Papa Paella to anyone for their next event or party!!

Delicious!!! Loved the paella but strangely couldn't get enough of the vegetarian preparation... full of mushrooms, asapargus and more. This chef cuts no corners... he also served a made from scratch a creme brûlée with hints of cinnamon, orange and star anise. This organized, creative chef takes pride in his dishes with a very thoughtful presentation. Muah!

The only reason I’m giving Papa Paella 5 stars is because this rating system doesn’t go to 6. I’ve been hearing buzz and seen the posts for Papa Paella’s food-craft for a year now. I finally tracked him down at 7 Creeks Vineyard today. And holy wow, it was worth the chase!

Of course I tried both dishes he offered today - the seafood Paella Del Mar and the Southwestern Paella de la Tierra.
First thing my eyes “taste” in the Del Mar are the shrimps (iykyk). They were the perfect size - a small and plump morsel, yet larger than krill-like baby cocktail shrimps. The tender blush hue of the chunks I could see amidst the pile of soyrizo-seasoned rice promises the right amount of sweetness and texture. The rice is moist and clingy so I couldn’t see how many shrimps are hiding in my dish. I’m on the hunt for quality and quantity.

Before my first bite, I started forking through to find the best shrimp and struck a black mussel shell. Its halves were popped open to my favorite angle - just enough for other tasty bits to slide in but not so wide that the mussel is stringy or dried out. Everything looks just about perfect so far and I’m feeling confident Papa knows best in his selection of the seafood. I couldn’t let myself be distracted and focused on my tasting strategy of shrimp first and mussels next.

Spoiler Alert: the texture and flavors were excellent! My only mistake was that I got into an internal battle of which bites to prioritize. Shrimps! Mussels! More savory saffron-infused rice! I still had the Tierra to eat!

Bolder in spice and salty umami (although it’s not spicy hot), the Tierra built on the flavor momentum from my first course. It tasted like a Texas sunset - nuggets of chorizo beamed rich warmth alternating with the lighter sunniness of the chicken all held together in harmony by that salty, tangy, Bomba rice. I couldn’t put down my fork and I had plenty of 7 Creeks wine to taste!

Chorizo and dark chicken aren’t my preferred proteins but in Papa Paella’s expert hands they exceed their humble origin. Superb paella is as much about timing and technique as it is about ingredients and traditions. But it doesn’t mean that all paellas are similar. I can’t wait to try his other variations and I hope I see you there!

PS I’m sad that I didn’t arrive early enough to get the full pan money shot. But I’m super lucky to get one of the last servings as he sold out early today.

I love partaking in Pappa Paella’s delicious paella when he doesn’t pop up at the 7 Creeks Vineyard. It reminds me of years ago visiting my husband’s mom’s house in a small town outside Avignon, France 🇫🇷. My mother in law’s neighbor made a huge paella 🥘 for the neighborhood in our ho or and it was such a fun day. Eating Pappa Paella’s paella brings back that memory every time I enjoy it.
