WOW! I used Rosarito Foodtruck for my husbands 40th and we were all blown away! Great service, great food! I would highly recommended and I will definitely be using Carlos and his team again!

I've frequented Baja California in Mexico - Rosarito ATX's menu is incredibly delicious and felt like getting to taste Baja California again. Their tacos are some of the best I've had in a long time! Ordered the Baja Shrimp (fried) and the Gobernator (grilled shrimp with a deliciously creamy/slightly spicy sauce, and other extras) - both pictured. The tortillas and produce were totally fresh, the meat was all cooked/grilled/fried to perfection, the sauces were flavorful, and the tacos themselves were stuffed to the brim. Everything was savory and amazing - we can't wait to eat their food again! (As a p.s. they take Covid/health precautions seriously - they wore masks the entire time and also had hand sanitizer for customer use as well.)

Good food, good value. Enjoyed a very healthy portion of the Green Shrimp ceviche.

Ridiculous wait time of over 45 mins and my order was wrong! I asked twice, and was assured it was correct. Not worth the money spent, extremely disappointed.

Honestly, 5/5. I was craving some Ahi but was a little concerned ordering it from a food truck - their Ahi tostada had some of the freshest fish I've had in Austin. I also got the Gobernator grilled shrimp and Carne Asada tacos and they were seriously amazing. Really hit the spot and soooo worth the price. These are like gourmet amazingness. Order it, you know you wanna.

Rosarito came to our apartment complex during the stay at home order, and we were so glad we got to try it!! I was really looking forward to the ahi tuna tostada. We got two. One had much fresher tasting fish than the other, but the base salsa and topping salsa (awesome sauce, I think?) were good on both. I got the gobernator bowl and loved all the flavors. The grilled shrimp was very tasty, and the vegetables/fruits? in the bowl were really good! I love that it came with plenty of lime to add in. Both the ginger chile soy sauce and the chile mayo were good additions. My husband got a campechano burrito and wasn't a huge fan - he felt like the fish smelled/tasted too fishy - not sure what kind of fish they use.The man who runs the truck was also super sweet and helpful. He didn't mind questions at all. We initially tried calling to place our order but missed him twice. I eventually walked there to order, but he did call my husband's number back to check to see if there was anything he could do for him.

If you're looking for something that feels like it could have been plucked right off the PCH and transported smack in the middle of East Austin, look no further. The menu boasts mostly fish tostadas/ceviches and they can be easily summed up as little tortilla discs swathed in a spicy aioli, dressed up with catches of the day that are prepared as fresh as they can be without dripping in gulf water. They're definitely citrus-y and light and at $5 or $6, cascading with fish, which is ideal since that's what you're paying for. I don't think Rosarito offers a tostada sampler currently, but they definitely should, as that's the perfect way to experience this cute operation's fare because I don't think I could pin down a favorite of the salmon, black drum, and shrimp ceviche I tried. Ask for the chili oil they have on the side to punch any of them up a bit. For now, I'd skip the octopus ceviche in favor of the tostadas. I recommend popping by this van for an afternoon snack or full fledged meal, depending on how many you want to throw back.

Peeped this new food truck (but I think it's actually an awesome retrofitted van) on its opening day! Loved their tostadas - each had its own delicious mayo and bright, distinct flavors. We had the salmon ceviche tostada, the shrimp ceviche tostada, the black drum ceviche tostada and the octopus ceviche which came with some crackers but we opted to scoop it up with tortilla chips. I loved all three tostadas but my fave was the black drum. Just a well executed, balanced little dish. Definitely worth a pop-by.

This truck comes by my office once a week. I finally decided to try it and it was delicious! I got a shrimp burrito. The shrimp were huge and the breading was really tasty. The portion was definitely enough to satisfy my hunger. Will be on the lookout when they come back to my office again.

I rented the Rosarito food truck for a birthday pool party. Carlos was awesome. Very good communication, which is important when planning an event. He and his crew showed up early and set everything up stress free. The food was exceptional. The tuna tostadas was one of the best things I've ever stuffed in my face. The crew got the food out fast, all my guests loved the food, and they cleaned up after themselves. I can't wait to have another party for an excuse to hire them again. Price was very fair. I have no negatives about Rosarito.

OMG, this is the best food truck in Austin. I had the Gobernator Bowl. It was unbelievable. If they are in your area, GO!! Delicious, innovative food. You will not be sorry. I wish I knew how to create at home what they do.
