BUT FIRST, you'll need to order the appetizer, "Queso Dip" because once your Chicken Blue Corn Enchiladas come out, you'll need to scoop some of that Queso to put on top of your fried egg that is already on top of the enchiladas stack... yes, stack because the enchiladas are layered (not rolled)! IT IS TO DIE FOR!!!! Take your leftovers home because this dish is even better hours later to even the next day as the flavors will be able to seep further into themselves!!! As a native Coloradan used to decent Tex-Mex, it was a delight to find this restaurant on a RV trip to Texas. Fresh ingredients, great salsa and sauces, homemade blue corn tortillas, the guacamole, and great service. We went twice.

On our first visit to this restaurant we experienced flawless customer service and enjoyed great food. The atmosphere was very intriguing and we really enjoyed the massive wall. The preparation of the food was excellent. I ate the Verde enchiladas with chicken, Muendo, fruit, barbacoa tacos. The muendo was my favorite...it was so flavorful and had just the right amount of spice. Definitely will be going back to enjoy the buffet and the price reasonable!

This is not tex-mex (and thank goodness). Place all of that soulless, movie-theater-nacho-cheese garbage on the ground, and kindly treat yourself to something life-affirming here instead. Pick a familiar dish and get lost in the thrillingly complex flavors of the house-made sauces in a warm "I'll never leave" ambiance with family friendly service, and cocktails that are so refreshingly light that they'll whisper "tranquillo" as you slide under the table. The horchata tastes perfectly from scratch. It's sweet, subtle, and if you manage to let your glass sit: the layers separate like real ingredients do. The ceviche was upsettingly fresh (ceviche being a dish that if a place nails, you can blind order any of their other seafood). If Southern California Mexican food is what you are most pridefully familiar with, prepare yourself to feel uncomfortably curious about the cost of extending your visit JUST to spend a few extra meals with Las Guitarras. We came for the Sunday brunch buffet on 4/7/24 - excellent assortment of foods to pick from.My hubby loves made to order omletes - so he immediately went to that station on the right. While my sister & I started more on the left side by the sides, enchiladas, chicken fajitas & soups. IMO both the red & orange enchiladas were too salty (altho my husband thought they were fine) but the chicken soup & the ground beef hard shell tacos made up for it ?. Oddly the waffles & pancakes are on the dessert table so I had 1 each on my dessert plate - they were very basic. The star of the desserts was definitely the hot & fabulous bread pudding ? - whenever they put a new tray out, it went fast!
