Wow! This is a hidden gem that deserves a spotlight! I had no idea this place existed, and judging by what the staff said, I’m not the only one who’s been late to the party. But I'm thrilled I finally found it. Soufflé Cafe & Bistro is one of those rare spots that feels like it’s been waiting just for you to discover it.

I showed up a little before closing and they greeted us with nothing but kindness and zero hint of the negative energy you sometimes get elsewhere. That alone speaks volumes.

We ordered breakfast, and every bite was a warm hug from the kitchen. The omelet? Fluffy, flavorful, and gone way too fast. The potatoes hit that perfect crispy-soft balance, and the waffle, a chef’s kiss! Golden, crisp, and just the right amount of indulgent. I left with a blueberry cheesecake in hand (and absolutely no regrets), and let’s just say it almost didn’t survive the car ride home.

What makes this place shine isn’t just the food, it’s the heart behind it. You can feel that it’s family-run, likely by a group of sisters who clearly love what they do. It’s the kind of place where the care shows up in every detail, from the warm welcome to the perfectly executed plates. Way better than any chain restaurant, and with soul to spare.

Oh, and did I mention they have a drive-through? That’s right. Gourmet-level comfort food and a drive-through window? It’s like they knew exactly what we needed in life.

Already planning my next visit, and this time I’m diving into their drink menu. If you haven’t been yet, go. Just go. You’ll walk out full, happy, and wondering how you ever missed this little gem in the first place.

I have found my go to breakfast spot. I came in last Sunday and the food was delicious and extremely flavorful. I didn't write a review because I wanted to see if it was just a good day. I came here again one week later and I can consistency is their game plan. The food was perfect once again. I highly recommend eating here if you live in Cibolo our the surrounding area. Their service is amazing and the food is perfect.

Came in for breakfast here before and had a pleasurable experience. Since I don't get on this side of town often, I wanted to try it again. They did not disappoint! Coffee was so delicious, and their French toast is heavenly. It was drizzled with lemon cream that paired perfectly with the blueberries and strawberries, which were very fresh, making the dish quite refreshing and definitely made with love. ❤️
Superb service, and we will be back again to try lunch. Highly recommended for an intimate gathering or small groups of less than 4 people. Accommodations are great for a small locale, with outdoor seating. Clean restrooms. Great variety in the menu making this place, in my opinion outstanding! Keep up the awesome dishes and service ladies!

Stopped by for a few tacos which were delicious btw. Charging customers to use credit card is absurd 3.5% extra. 6 small tacos over 30 bucks? Took 30 minutes to make the tacos, and they weren't busy at all. Way over priced and will certainly never visit again due to the credit card use charge. That is your cost of doing business. It's a shame too. I had high hopes for this little business.

Prices are a bit on the higher side, but it’s still worth a visit to see if it fits your brunch vibe.

My first visit here, and what a delightful surprise! Though the place is small, it delivers bold, unforgettable flavors. I ordered the French toast—and wow, I had no idea it would be the best I’ve ever tasted. The iced coffee was equally impressive. Service was prompt, prices were reasonable, and the overall experience was exceptional. I’m already looking forward to exploring more of their menu.

The empanadas were to die for. Definitely need to try the caramel brulee latte! It is so freaking good! I had the BLT and it was yummy. Everything was good and we ate it before I got pictures.
