Could not give Woody and the owners more of a rave review! We will definitely come back just because of this distillery. Not only did they treat our pugs like royalty, they treated us like family. We had such a great time hanging out and getting to know everybody and the cocktails were flavorful, well, balanced, and exciting! Walked in got great service would highly recommend.

Very friendly servers! I tasted the signature mule. It was not too sweet and didn’t have a strong alcohol taste, although the alcohol is strong: 102 proof. I liked it. I tasted the hot choco-peno. I do not like a strong alcohol taste, so it wasn’t my favorite, but it certainly warmed me up. It doesn’t burn the tongue like jalapeño peppers. Lastly, I got a full drink of the hot chocolate with coffee dulce and it’s delicious! Not a strong coffee or alcohol flavor, it just warms your throat. If you want a drink but don’t really like alcohol, I recommend it. I recommend this place because you can try the drinks and it’s reasonably priced.

Hill Country Distillers was one of our stops on our tour and we are so glad it was. We couldn’t have asked for a better tasting. Woody was amazing and really knew his stuff. He answered all our questions and made sure we had a good time. Highly recommend 10/10!

Fabulous place with great spirits and cocktails.A note about the “racist” accusations form three years ago: Eric Guerra, Roy Torres, and “Brie” (is she a cheese?!)—check out their stats; they’ve only given 1-star reviews to any place they’ve ever visited. And Torres is a “health dept mystery shopper”? LOL.I think the only racists on the property that day were Guerra, Torres, and their cheese girl.

What a fun place (for adults)! We were too late for the tasting they offer, but we had the nicest bartender, whose name is definitely not Angela - at least she doesn't answer to that name. Not Angela was very patient with us as she explained how their product (a specialty distilled spirit/MOONSHINE) is made. They offer a "Cactus Spirit" she (the bartender) likened it to a mix of vodka and tequila - 102 proof! I ordered a Cosmo with it used as the liquor and it was one of the best Cosmopolitans I ever tried. Then I tried their version of a Margarita and enjoyed it, but it had a bit too much agave in it making it too sweet for my taste. This is a must try for Yelpers looking for something different!
Woody was an outstanding and entertaining host for our group tour. Will definitely be returning!

Oh my god best stop on the trip!! Was late to the tasting and the bartender took the time to do a private tasting for us at the bar! All the liquor is made out of pear cactus pads and have such great flavors! The people in the distillery as well as the city were so warm and comforting.... Will be back as soon as I can!
