dear carbone
my birthdays have always been hard for me ever since my mom passed away two years ago. i decided to treat myself to a nice birthday dinner at carbone where our server Norma gave us one of the worst experiences i’ve ever had at a restaurant. We were not asked if we were celebrating anything and the server didn’t make any attempt to sell us on anything or make our experience good. She only talked to us three times and seemed bothered by our presence while the table sitting next to us who ordered more received top notch service, we weren’t even asked how our food came out and was tasting.  It’s sad that we were mistreated because we are young adults in our early 20s when we came in with the money to spend and the expectation that we would receive good service. I also told her I had a nut allergy and we were still brought the complimentary cake that contains almond cake. What was supposed to be a nice treat and experience turned into feeling uncomfortable for an experience that i was ready to pay for. Can’t see myself coming back.

I celebrated my birthday at this restaurant with two of my girlfriends. The food was delicious and I found the service to be outstanding. Andrew and JP were both very personable and professional.

Second time at Carbone and the service is still atrocious - unapologetically rude and inconsiderate. From the hosts to the supposed managers, just AWFUL!!! Never gain

Wish I could give this place 0 stars. Horrible service. What’s the point of making reservations if they’re not honored. Completely ruined my nieces birthday. They simply do not care about the customer experience. You can’t be a luxury restaurant with subpar service. Management should be retrained.

Overall it was good. The food was tasty. The location is beautiful. The service was just okay. I was there for a birthday party for Sherelle Black 12/5. It was 8 of us. The waiter, a guy, just wasnt patient at all. At one point when we told him for a 2nd time that we were waiting for 2 others before we order, he literally waved his hand and made a teeth smacking noise and just walked away- no response and no smile. Clearly annoyed or frustrated. Even the ordering process was very rushed. We would stop to ask the table if they wanted some of a certain dish so we'd know how many to order and while asking he'd interrupt to say and start writing down the number to order when we haven't even confirmed.

We still left 15% tip (($140 on a $800 ticket) because its the right thing to do but he didn't deserve it. The other down side is the very small portions.

Beautiful restaurant, decent service, interesting way to handle reservations and contacting the restaurant. We ran extremely late due to traffic and had to email the restaurant to let them know. They said they may be able to accommodate us. When we arrived it wasn’t busy in the least so I don’t know if the email responses are cut and pasted but it didn’t seem hospitable.

The food was just ok. Not sure we get the hype. A lot of the sauces are very rich and buttery. Then the basic tomato was very bland. The options for a person with dietary restrictions are very limited. Our server didn’t seem knowledgeable about what was suitable either and had to double check. Ordering something basic seemed the safest. I will say they have gluten free pasta and limited - according to the server - dairy free options.

They do give complimentary bread, salumi and pickled vegetables along with parm which was a nice touch.

Overall I’m not sure we’ll be back unless it’s for a cocktail.

Fabulous on every level, TEN stars!!!!!! My husband and I enjoyed the BREAD, Pickled Cauliflower, White Truffle Buratta , chopped salad, Mona Lisa the spicy rigatoni and White Sea Bass. Everything was spectacular, we will definitely be back 💕

⭐️⭐️⭐️⭐️⭐️ Absolutely Outstanding — A True Dallas Gem

Carbone’s is easily one of the best dining experiences in Dallas. From the moment you walk in, you’re greeted with warm hospitality and an atmosphere that feels both classic and elevated. The service is exceptional — attentive without ever being intrusive — and you can tell the staff truly take pride in what they do.

The food is the real star here. Every dish is executed perfectly, from the fresh house-made pasta to the incredible sauces and impeccably seasoned entrées. The rigatoni vodka and veal parm are absolute must-tries — and the lobster ravioli is truly spectacular. Perfectly tender pasta, a rich and delicate filling, and a sauce that ties it all together — it’s unforgettable.

Even the simpler items, like the bread service and salads, are crafted with care and quality ingredients that make them stand out.

The ambiance is energetic yet intimate, making it great for a date night, business dinner, or a special celebration. Carbone’s manages to combine big-city polish with genuine hospitality, and it shows in every detail.

If you’re in Dallas and want an unforgettable meal, look no further. Carbone’s delivers on every level — food, service, and experience. Highly recommended! 🍝✨

Beautiful restaurant. The experience was less than great because our waiter spoke very fast, did not explain much, was seemingly condescending, and wasn’t personable in any manner. Our food portions were also smaller than expected but nothing terrible. The food was good. The other staff were more helpful than our waitress. We saw management stop at other tables and ask how the meal was or poured a drink for a guest. But they walked past our table with barely a smile. As solely a table of black women we did not feel as welcomed, more so overlooked compared to the other guest and for this reason I don’t think I’ll be back. Also had to stock my own tissue in the bathroom. There were only two personal bathrooms for the whole restaurant.

I’ve never written a review like this before, but the experience I had on Thanksgiving deserves to be documented.

I made a reservation well in advance and did my homework: Apple Maps clearly states “pets welcome” and OpenTable lists “dogs allowed leashed on patio.” I even added a note to my reservation requesting a patio table because we’d be bringing our dog. So imagine my surprise when we arrived and the manager—the suited twerp stationed at the front; took one look at us and announced that dogs were not permitted.

When I mentioned that multiple sources online indicated otherwise, his response delivered in an eye-rolling, condescending tone was: “Pretty sure it doesn’t say that.”
If you’re “pretty sure,” maybe take a moment to actually check instead of dismissing a guest who took the time to confirm. A simple, respectful response like, “There may be a miscommunication; I’m sorry about that” would have gone a long way.

As we left, a couple of employees quietly mentioned that “he always talks to people like that.” That tells me everything I need to know.

Hospitality starts with dignity and respect. It costs nothing. Unfortunately, this manager seems to have missed that memo entirely. I hope the rest of the staff—who seemed much kinder—gets the leadership they deserve someday.

Came here after the Thanksgiving game. Great evening and perfect atmosphere after being at the game. Quiet and relaxing. Food always is above and beyond expectations
