Dry Aged steaks and an experience that redefines your standards for steaks. I would go back for the 90 and 240 days dry aged anytime.

Our 33rd wedding anniversary had just passed, but work lep us from getting away. We had marked the occasion by going out to dinner, but this was the next available weekend where we could actually spend some time together to celebrate.
We arrived at the hotel early and the restaurant effortlessly moved up our reservation. My wife ordered an off-menu drink from the bar and the bartender enthusiastically looked it up and got it out to her expediently.
Our main server was Mawi, and he was excellent from start to finish. He offered great menu insights and warm conversation, making sure that the experience was flawless. The rest of the service team were equally attentive.
We ordered the amazing bacon appetizer which I recommend to those who love it smoky!
We shared 44 Farms Wet-Age 24 oz Bone-in Ribeye which was cooked to perfection and lightly seasoned to allow the high-quality meat to shine. We added a salsa verde that was great, but the steak was excellent on its own. We also shared the onion rings and mashed potatoes, because it was a treat night and these lived up to expectations.
We were too full to order dessert, but they insisted on offering a delicious slice of cake that was more like a beautiful entremet. The perfect end to a perfect meal. We are sorry to see them leave this location, but will gladly enjoy going to the new restaurant. We appreciate everyone's contribution to a wonderful evening!

Did I go to the wrong Knife? I feel like this can't possibly be the Knife that I've read so many articles about.
Bread that was served was cold
Pork belly plate was bland and lukewarm, took 30min to come out
Steak was slightly tough and under seasoned, took 30min to come out as well.
Better places to get a good steak: Brass Ram, The Monarch, Perry's, III Fork, and Texas Roadhouse
I realized I don't like aged beef. The atmosphere was good. The french fries were to die for!!. I had the truffle fries.

Steaks were over seasoned and 2 of 4 were over cooked, once we were finally able to track down a server(it almost seemed like he was avoiding eye contact) we sent them back and they did come back better. Our pork belly app and salads were good, the sides were also not the greatest, all very heavy(lots of creamy and fried options). I was so looking forward to trying this since re-watching the old #TopChef seasons.
This restaurant is a hidden gem. I started with the bacon appetizer which was one of the best I’ve had. For my meal I chose the Wagyu Ribeye, and it was one of if not the best ones I have had. The drinks and service were top notch as well.
The only negative is the location. The restaurant is in a hotel which doesn’t match the upscale feel of the restaurants.
I will go back but won’t stay at the hotel again.

Came here with high expectations and it delivered in every way. A must try restaurant in Dallas (or Texas for that matter). Avocado fries are the best side dish we have ever had, anywhere. Filet mignon was perfection. Excellent service, great ambiance. This is what fine dinning is all about, thank you Knife!

Horrible experience. I only leave reviews for really good or bad experiences (or ones that deviate from the reviews significantly). Unfortunately this is the bad kind. I came with my wife and 3 kids for Mother’s Day to do something special. We had a 1pm reservation. Didn’t get seated until 1:40. Didn’t see a waiter until 2pm. Drinks took 20-30 minutes each time. Avocado toast was cold and soggy. My eggs Benedict was somehow both burned (muffin) and cold (overall dish). They forgot the French toast we ordered for the kids, leading to chaos. Anyone with young kids knows the importance of service and being able to get in and out. Our waitress checked on us maybe twice - had to flag her down. The entire wait staff looked asleep, high, or like they didn’t want to be there. One of the weirdest and worst dining experiences of my life, and I eat at a lot of nice places for work. As a business owner, I would want to know the state of the place.
Went for Mother’s Day brunch. Service was awful, had a reservation but it took 1 hr to get food. The food had to remade 3x to get it to actually be done.
