I’ve been going to Kaedama since it first opened when I was at UTEP and it’s been pretty consistent quality wise. Had a couple of dishes. Staff was amazing and always so kind.

I've searched everywhere and no dumplings on my order. This one is supposed to have dumplings in, I ordered extra meats and those where there and I got charged. But, they seem to have removed my dumplings without asking. I tried calling and calling and I have no response. I'm not driving back because it's raining. It's just frustrating to not be able to contact someone about this. I sent an email but my meal is incomplete still. The venue is still unresponsive.

We visited the place because of the good reviews and the appetizing photos of the dishes. Unfortunately, our experience didn’t quite live up to expectations.

We started with the vegetable and pork gyozas, but they were quite burnt — it tasted as if they had been fried in old or overheated oil, leaving a strong aftertaste. The texture was crispy, but more due to being overcooked than intentional preparation.

After that, it took about 30 minutes for our ramen to arrive. Sadly, the same issue repeated itself. In all four bowls we ordered, the protein was noticeably burnt (including the chashu, tofu, and the gyozas from the Thicc Boi ramen). One of the bowls also came without the extra toppings we had requested.

There seems to be a serious issue in the kitchen, which unfortunately affected our overall experience. We don't think we'll be returning, though we sincerely wish them the best. The only redeeming part of our visit was the service — our server was kind and attentive throughout.

Noodles, broth, and ramen eggs were fantastic. Gyoza was mid. Great service. Sat outside and it was a bit cramped and hot, but not their fault. Chashu is hard to get right in the US. Their chashu does not taste like Japanese chashu, it was like a pan fried pork chop in the soup. The chashu was NOT bad, but you can’t call it chashu.

The vibes here are immaculate. Whoever is controlling the playlist, keep it up! Food price is very good value! They have happy hour and deals weekday. The ramen is very salty! For sure need to tone it down on the salt levels.
