Flat Rock Smokehouse is the definition of “worth-the-drive” Texas barbecue—only it’s close to home and priced so you can make it a habit. What grabbed me first was the story: owners Robert and Kimberly Davis built Flat Rock from a home-grown catering hustle (launched in 2018), opened their first brick-and-mortar in Euless in January 2020, then moved the restaurant to The Colony—powered by Robert’s leap from banking to barbecue and his Army/West Point roots. It’s a Black- and veteran-owned operation with community at the center, and you feel that the second you walk in.

The pit craft backs the narrative. Flat Rock runs a big A.N. Bewley smoker and keeps the flavor squarely in the Central-Texas lane: post oak/pecan smoke, prime Certified Angus brisket, textbook pencil-width slices, shiny black bark, and that perfect pull of juicy, beefy tenderness. The ribs? The pitmaster’s pride, and it shows. Don’t skip the brisket mac-n-cheese or fried okra—both read as “pit-side classics” done right.

Taste the ethos in the menu, too. This crew is serious about quality—prime beef, slow-smoked turkey, pork ribs and tips, pulled pork, sausage, and chicken—with specials like beef ribs and pork belly burnt ends rotating in limited quantities. The through-line is care: low and slow, clean smoke, and sides that actually earn their place on the tray.

We had another amazing meal catered by Flatrock Smokehouse! They have been our go-to team for BBQ for events at my home as well as business meetings. Robert has always been very accommodating and great to work with!

Robert catered Fourth of July. Every single item was delicious. We had baked beans, potato salad, brisket, ribs and sausage. For dessert Apple Cobbler. Robert is an amazing Chef. Everything was perfection!!

We had heard good things about Flat Rock but our visit did not pan out. The atmosphere was decent, although the table was supposedly cleaned before we sat down had quite a bit of food particles left. About an hour after ordering, we were told they were out of brisket mac n cheese. The staff was apologetic and refunded a part of the bill. Our food took well over an hour to reach our table and that wasn't even the entire order. Food was mediocre. I found the okra was decent but the catfish had a slimy feel and I wondered if it was fully cooked. After we left I started to feel very sick to my stomach and unfortunately threw up 45 minutes later.
Sad to say we don't plan to return.

For the price of $37 the food was NOT worth it. It was two small leg quarters,2 pieces of sliced brisket, 1 sausage sliced in half, the brisket Mac and cheese was horrible. It made my fiancé sick. The apple pie was horrible. I think they might have been overwhelmed and not expecting so many people. I will not be trying again. Food was TRASH.

Review: Disappointed with Service Despite Great Food

Flatrock BBQ has some great food—I’ve enjoyed it enough to try bringing plates from The Colony all the way to Grand Prairie so my mom could try a good Texas barbecue spot.

Unfortunately, it’s been hit or miss. First time, she didn’t like the brisket or the peach cobbler. Still, I gave it another shot today (4th of July) hoping for a better experience. But after waiting over an hour, I was told it would be another 35 minutes—with no real concern from the staff.

Yes, they said they were short two people. I get it—we all have staffing issues—but I’m on a tight schedule and trying to support a small business.

Service matters. If you want loyal customers, you need speed, quality, and consistency. Food alone can’t carry a business. Flatrock, step it up.

We had a great experience! We tried the turkey leg and ribs, both were super tender and flavorful. For sides, we had the brisket mac and cheese, yams, and fries. Everything was hot, fresh, and well-prepared. I wasn’t personally a big fan of the brisket mac, but that could just be personal taste. What really stood out was the hospitality, the pitmaster came out to personally welcome us, which was a nice touch. Great food, great service, we’ll definitely be back!

I had the urge for some smoked chicken and popped in here one afternoon. The service was excellent and the smoked chicken sandwich was perfect! The only side I had was the okra and it was delicious. I’ll be back to try other stuff.

This was our first time at Flatrock and let me tell you, they did not disappoint. The bbq was so good, the staff was friendly and very grateful for our support. We had the turkey, brisket, and rib ends and they were all a 10 out of 10.

We got the sausage, smoked turkey, turkey leg, brisket Mac and cheese and potato salad.

Sausage was average, definitely tasted like a low quality grocery store sausage. The bbq sauce made it edible. The smoked turkey we received was dry and burnt. The brisket Mac and cheese was runny and overcooked noodles. Tasted more like watered down noodles with a ton of bbq sauce mixed in it. The potato salad was nasty as well. No flavor. Even tried adding salt and pepper to help, still gross.

Atmosphere was dark and cold, not very inviting at all. The plastic spoons and forks were an interesting choice. The only salt and pepper on the table was in the utensil packets.

The turkey leg and the Texas toast was the only edible items we found at this spot.

Coming back to give another updated review. I used to love this place and the last time I ate here seemed to be a one off. Fast forward and I got it again yesterday and confirmed it is not a one off. The ribs and brisket were phenomenal that I had for superbowl Sunday and boy have they fell off.

The ribs were extremely fatty and tasted old. Temperature control for food is obviously out of whack. They didn’t bother to trim the ribs I see. The brisket (my favorite meat) was soooooo dry. I wasted my money for sure. Oh and the Mac and cheese is terribly runny.
