The location is wonderful and the pastries from the bakery are amazing, but the property does need attention from the owner. The carpets could be cleaner and as another review stated the sinks and showers/baths drain slowly. Also, there were a couple nails coming out of a metal strip between the carpet and flooring going into the bathroom. The nails are up far enough and sharp enough to puncture skin. We placed a folded towel over it to make sure we were injured if barefooted. We reported both of these items to Gastehaus Schmidt upon checkout. We are contemplating staying here again, but the unjustifiable price increase for the quality might lead us to another location.

My family has rented all three of the Fredericksburg Bakery suites during the first weekend in December for the past several years.Overall, the property has deteriorated in cleanliness and is in general disrepair. For example, several bedroom doorknobs do not work, the back door does not close/lock properly, sinks and bathtubs do not drain well, the furniture is worn and dirty, odd noises from the downstairs bakery are painfully loud at night, etc.We were willing to accept the lack of maintenance by the owners for the one redeeming quality of the property - the balcony overlooks Main Street and is an excellent location to watch the annual Christmas parade. The annual parade is a magical and endearing event that everyone should experience!Last year, the owner of the property (Patsy Penick) showed up shortly before the start of the parade and announced that her family would join us on the balcony. She declared that, regardless of my family renting the entire property, the owners have the right to do so. It was an awkward situation since we had planned to use the balcony to entertain our family and guests. She also recently stated that her family and friends may use the balcony this December for the parade. The people at Gastehaus Schmidt were kind enough to talk with the owners on our behalf, but to no avail. So, if you are ok with a run-down property with an excellent (but shared) balcony, this place may be for you. My family has found a new place to rent, with respectful owners, to enjoy the storybook holiday atmosphere of Fredericksburg.

Great range of large cookies and pastries and they are baking all day. I had a sweet German pretzel and a rolled apple crisp for $9.00. Both were delicious with the pretzel melt in your mouth good. The also have some gourmet chocolates. The grandfather had a full bakery next door for years but his daughter and grandson just do pastries and cookies.

My wife got a strudel in Schulenburg and was convinced that we could find one of the same caliber in Fredericksburg. We stopped by this bakery based on other reviews that they had high quality goods. The strudel was 85% puff pastry and the apple crisp thing was about 85% phyllo dough, with a tasty (but underwhelming) amount of apple filling in both. However, neither had any quality to distinguish them from store bought dough, and neither was actually flavorful enough to have us come back to try anything else. Other products here may be good, but our experience was not worth the price that we paid.

Now, nearly a full month after our New Years vacation, I still fondly recall our meal here. First, I love the old general store feel. Though the seating can be crowded during peak times, we nestled ourselves in the back right corner, away from the hustle and bustle near the front of the bakery. My wife and I knew we were having a big meal for dinner and just wanted to get in out of the cold, kick start the boozing, and have something light for lunch. (Translation: My feet hurt from walking through all the shops and my wife needed some liquid courage to convince herself to pay way too much for a pair of (admittedly awesome) boots.) She had the grilled cheese with jalapeno jack cheese and wheat bread. She said it was good, but did seem preoccupied with her red blend so take that for what it's worth. I went with the chicken salad combo that featured chips and a pickle. I opted for the chili instead of the soup at the recommendation of the girl behind the counter. In short: I got quite full for only $8 (which is tough to do in Fredericksburg) and I thought both the sandwich and the chili were quite delicious. The counter service could've been quicker. Candidly, with the amount of foot traffic they had during the lunch hour, they really needed 2 people taking orders, pouring drinks, taking the orders back to the kitchen, etc. -- Objectively, I have to knock a star off for that, but I still highly recommend it over one of the 3+ places touting themselves "the best hamburger in town."

Great little bakery with lots of yummy sweet treats!! A little pricey but only because everything is high end ingredients and freshly made. Lots of little gift items and housewares galore. Staff is friendly and helpful. I got an apple strudel which was super light and flaky.. could have used a little more apple filling though. Was not here for very long so I will be back for sure for a closer look.

Practically world-famous for their sweet German pretzels - try one and you'll see why. The cookies and cinnamon rolls are awesome, but they do have more to offer than just the sweet. They now serve lunch, and it's mostly on the lighter side, and very tasty and low-guilt, which leaves room for an indulgent dessert!

Everytime I come into Fredericksburg I have to get a pastry from here and a sausage kolache. They are so good. It gets packed so if you want to sit, just know that its a tight fit.

This place is awesome but it loses points with me because it is difficult for those in wheelchairs. The tables are too close for a chair to fit unless you sit at the tables closest to the entrance. Even then you can't get in line if you are in a chair if there is a line (which there usually is). But they do have a great selection of yummy stuff.
