i just tried Hẻm and i really liked it.
the space is so pretty with a strong vietnamese vibe, very cozy and aesthetic. Our server, Vy, was super attentive and friendly. He kept checking on us and recommended dishes that matched our taste, which I really appreciated.
The food was good, the staff were sweet, and make our experiecne more memorable. I would definitely come back💗

Oh man this one hurts me to write. I visited Houston and came here in August 2025 with my friends and Hem was incredible. The food was absolutely delicious with perfectly balanced flavors and perfectly cooked temperatures. I remember we came and had to wait for a table because it was packed. All 6 of us were amazed with the food. We even joked about moving to Houston—that’s how good it was.
Last week, I came back to Houston with my family and took them here on my rave review. We got all the same dishes that I loved last time and I was so excited for them to try it because it truly did feel special before.
Complete and utter disappointment. To the point where I was gaslighting myself if it was even good in the first place. I should have known since we were there at 5pm on Friday and there were only 4 tables there.
The steak, which was the absolute highlight last time, was overcooked on the outside and then nearly blue in the middle. The cook was so off. Not only that but the spice balance was off. Last time it was a delicious, lovely bite of 5-spiced tender meat. This time, it was like taking a bite of licorice meat. The taste of anise was so much stronger this time around that my mom and sister actually gagged when they took their first bite. Mom said it tasted like soap.
The pineapple fried rice was plain, no seasoning, and just tasted of a basic oil and soy sauce. The flavor was one-note. The shrimp on top were unfortunately completely obliterated. They were so overcooked that they immediately turned into mush in our mouths. Also the vein had not been cleaned. Barely any pineapple nor cashews in the rice. Really disappointing.
Unfortunately too, the chicken wings and the skewers were not cooked well. The chicken heart/gizzard skewers were overcooked and rubbery and the sauce it was covered in lacked flavor. The beef and pork skewers were fine tho and ended up being the best bites of dinner. And the taste of the wings was still good but the chicken was dry and overcooked. Last time, they were some of the best bites of the night—moist and delicious.
The truffle fries were good but they were just fries with truffle oil.
The atmosphere was as good as the first time. I do love the decor but way less people this time so less lively.
Either way, it was quite unfortunate. I was so disappointed that I brought my family here and recommended it so highly to the point of embarrassment. I’m not sure if they changed owners or chefs but the food has gotten so much worse over just a few months. I really hope they can pick themselves back up quickly because the first time I had them felt like a really special experience.

my most recent experience at hem was absolutely disgusting. i’ve been to hem once in 2025 (bottom photo), and the steak was cooked well. i cannot say the same for my most recent visit (top photo).
i wish i took a photo of the food i received initially, but it looked like they threw a bunch of steak pieces onto the cutting board. the meat was overcooked and tough, yet still raw in some places. i asked for medium rare, not raw. i’m not even sure how this style of cooking was achieved. the meat was all connected with strings of fat and not properly cut for consumption.
i ate around the few edible pieces, but i regret not bringing this up to the server when she brought the food out. the funny part is, she never once asked us “how the food was”, because i’m sure she saw how my plate looked like a massacre. this entire experience was absolutely ridiculous.
it seems like multiple other people have been complaining about undercooked/raw food being served and the overall decline in the quality of food. perhaps this needs to be addressed to the cook(s) and/or management.

I’ve been at Hem a couple times since their opening and I recently went after a year just to eat my favorite dish - seafood combo, chicken cartilage salted egg flavor, and coconut snails. A lot has definitely changed including flavor, people, and more. In my opinion, the restaurant has became more family-friendly compared to my first times there.
I reccomend the egg coffee and my husband reccomends the passionfruit soda + mango grapefruit drink. Food-wise, I love their seafood options and their five spice grilled beef plate. Their pineapple fried rice wasn’t as special, but everything else makes up for it.
Our server, Kim, was one of the sweetest servers we have ever met. Talkative, attentive, checks all the boxes for us. Other servers, one in particular, Andrew, came and helped us too, so A+ for that. I think my husband made a comment about whenever we looked up, Kim was always sweeping. Funny, but true. I love that the restaurant overall is clean from the host stand all the way to the restroom.
One of the longest reviews I’ve ever made, but HEM will definitely be seeing us more. Great job guys.

We ordered Com Tam today, and the pork in both meals was still raw and pink. This also happened during our last visit when we ordered the Fried Chicken Fire—the chicken was raw and bloody. Pork and chicken should never be served undercooked.
We called the restaurant not to ask for a refund or replacement, but simply to let them know so the kitchen could be more careful. Unfortunately, the manager seemed dismissive and asked us to bring the food back for her to see, as if she didn’t believe us.
This used to be our favorite place. We came here often, recommended it to others, and even hosted a few parties here. Sadly, the quality has declined significantly. We love the concept of this restaurant, but after repeated food safety issues, we’re very disappointed and won’t be returning.

disgraceful. straight up raw beef. I'm not saying it's undercooked, as in raw inside; i mean that an entire side is raw, meaning it hasn't even touched the pan.
Judging from the dryness of the cooked surface, it's highly likely not cooked fresh to order either - probably just been sitting out and reheated in an oven/microwave/warmer when the order came in.
my suspicion is that it's been pulled off the grill from a mistaken/cancelled order and they were too cheap to throw it out so it was sitting there and went out to the next unlucky customer (us).
unfortunately it wasn't my order so i did not notice right away. about 10 mins later when i took a bite is when i realized it's the texture of uncooked meat.
it should've been addressed back then rather than in a review, but at that point we didn't want to bother the waitress... just took it home and cooked it ourselves.
disregarding all that, the dish that i had ordered for myself was cooked edibly but still very mediocre (this impression was before finding out about the raw microwaved steak and thus completely unrelated). not sure why this place is so popular. felt like just another gentrified social media restaurant for when food is less of a priority than aesthetics/vibe.

I came to Houston last year just to eat, and I chose Hem because of their great reviews and because I love seafood. This year I came back… ☺️but I had to share this experience with my family. The food was absolutely delicious, and to top it off, our waiter Vi was incredible! He was quick, efficient, and had an amazing personality. I definitely recommend Hem!
