Earlier this evening, my mother and I ate at Huddle House in Kermit. West Texas as a whole is struggling to staff businesses. In fact, that restaurant was forced to start closing at 6. We had a very young server named Zoe. Huddle House is so short staffed that Zoe was the one and only server, busser, and cashier. She did an amazing job! They have about 25 tables in the restaurant.
