We went to the ramen Akita with the family for lunch. Although there was only one person - owner, chef?- the service was attentive and personable. The menu was simple, which IMO, is preferable compared to a long list and the food/ramen was excellent. I tried the chicken karaage and spicy garlic chicken ramen. The broth was savory and flavorful and the texture of the ramen was just right.
The chief and the bartender/waiter are polite and attentive. However, they seem to be the only two people working there, and it takes quite some time for them to clean up as well as to prepare for meals.
Compare to other ramen places in DFW, the price is a little high and the ramen is very salty. However, the broth is quite good.
In general, it may be still worth it if you are close to this restaurant and want to have a quality ramen.

My new favorite ramen spot. The pork broth ramen was well balanced and savory. Noodles were and chewy and perfect. The pork belly was thick cut and had amazing flavor. I will be coming here again.
