Good but not as good as it used to be a decade+ ago and not as good as Terry Black’s down the street. Brisket could use more seasoning. Pork ribs still have silver skin on them.

It is Texas BBQ. It is very good. We had a rack of pork ribs and chopped brisket sandwiches. Delicious!

I came to Black’s BBQ with high hopes and an empty stomach. I left with trust issues.
The brisket looked promising—nice bark, respectable thickness—but one bite in and I realized it had the moisture content of an old library book. Chewing it felt less like eating barbecue and more like participating in a jaw-strengthening exercise. If this brisket were any drier, it would qualify as a historical artifact.
Then there’s the sauce. I don’t know what I was expecting, but it definitely wasn’t something that tasted like warm ketchup that once overheard a rumor about barbecue. It didn’t complement the meat so much as distract me from how desperately the brisket needed emotional—and physical—support.
For a place with legendary status, this meal felt like a prank that went on too long. I kept waiting for the “aha” moment where it all made sense, but instead I just kept chewing… and chewing… and chewing.
Five stars for the confidence, though. It takes real bravery to serve brisket this dry and call it a day. The price was that of which can be compared to eating lobster from the back of an old western wagon.

Best brisket and sausage in Texas. I’ve tried almost all. We travel 3 hours from Houston to eat here regularly.
