The menu simply states, "Secret Vegan Menu, Yes. " When we got to the counter we were given the choice of a pasta dish or a sandwich. We got both. The pasta was a fun shape with spinach, mint, and ground pistachio tossed in a kind of buttery vinaigrette. We devoured it, BUT THE SANDWICH was the star. Their fresh baked chiabatta-style loaf stuffed with orange slices, raspberries, arugula, green olives, red onion and dates. It was incredible. I wrote down everything I could discern in hopes of recreating it at home. It was THAT good. The vegan offering may change, but these are clearly passionate food people who know what they're doing. Whatever they offer the vegan community, it won't just be a regular menu item with the meat and cheese removed, it will be thoughtful and delicious.

Even for Marfa, hours are unpredictable, so call before you go if you’re hoping to catch them for dinner - they’ve been closed for maintenance a few times that Google hours indicated they were open.

I mean wowwww! We had the wedge salad, a sandwich, kids pasta, and two of their daily gelatos. It was all to die for. So glad this was the one place we decided to stop while in Marfa!
We were blessed to have been told of this Jem, and eat here during our visit to Marfa before heading to Big Bend. The fact they kept the original front of the building says so much. We walked in to a bustling prep and order area where we got to watch creations going out that made our mouths drop. The owners, husband and wife, worked side by side. The covered sitting area they added on was very comfortable and allowed us to watch the homemade bread baking in the stone oven. Once a basket was full he’d walk it in to restaurant. The four of us all agreed these were the best sandwiches we’d ever eaten (ages 61-72), and we let the chef know!
Such a fun place!! Cactus parm is different and good! Ordered the banana split and raised my review to 4 stars! It gets busy around 7pm on Thursday night.

One of a kind sandwiches. I can honestly say I had one of the best sandwiches I’ve had in my life at this restaurant. I felt like I was eating a sandwich from Lazio, Italy. Must visit if you’re in the area and excellent service from this sweet lovely lady called Sam.

Hands down the best sandwich in Marfa. There's a simplicity in the sandwich making art that really leads to highlighting the quality of ingredients and care by the chef team who craft a good sandwich. The Bordo team absolutely kicks butt at sandwiches!
The bread is wood fired sourdough, you can even watch them bake the next batch it while you eat. The beer and wine highlight some of the best Italian brews and vineyards that go best with their sandwiches too.
And with a smile and a wink you may can talk them into the best espresso in Marfa! They have pure Italian roasted beans for that rich and complex Italian espresso flavor. After dinner or lunch, finish with an espresso for the full Italian experience!

Some of the most memorable sandwiches I've had! Each element in their sandwiches is perfectly crafted. We also requested Bordo to cater a party for us and it we couldn't have asked for a more delicious meal. It was wonderful working with Hannah, she was very kind and aware when preparing food for one in our group with celiacs. Our whole group left with happy bellies.

Amazing service, fantastic food. I tried the pasta and I had the Serva sandwich which I seriously think is the best sandwich I have ever eaten (everything was perfect from the bread to the pistachio butter). Also Sam is so sweet.
