Recommend 10/10 Best Cajun food truck in the Permian basin. Justin and his father are guys who are from Louisiana and when it come to there food you can definitely taste it! The gumbo and Boudin balls were amazing and there spring rolls were awesome as well! They go to woodys every Saturday and it’s worth it!

We saw this food truck today leaving midland on loop 250.I’m always looking for new food trucks and this one being Cajun caught my eye.i will tell you that the door was amazing.i has the chicken and sausage gumbo and a boudin ball and my daughter for the catfish étouffée.It was all soooo good!!The rue was perfect!! highly recommend!

I’ve been lucky enough to try Marty’s food a couple times...and I’ll continue now that he’s got an awesome food truck! The food is amazing! Beautiful brown gumbo served over rice, étouffée that is rich and creamy, and red beans and sausage over rice that’s crazy good. Even better than the food is the fact that you’re supporting “Party Marty” - an all-around great guy who supports the Permian Basin and treats everyone like family!! Ya’ll should try this new...
