Navigate to Pilot Travel Center, Paige, TX because the map is still wrong. This is a very mini Einstein Bros tucked inside the Pilot. You'll find a limited menu that offers a couple sandwiches and a surprising bagel variety sometimes!
First, the address is wrong, so if someone that does not know the area were to use this address for directions, they would be sitting 3.1 miles away, likely wondering if the location is actually inside the Sherwood Forest Faire. Because that’s the only thing around.
Second, Einstein did listen and no longer keeps all of the bagels in the bin to dry out. They keep 1 for reference and then go get you a soft one. Sweet. Thank you.
Now for my review…I accept that we get treated like 2nd class citizens out here. (Especially by HEB). But, I forgot how much I hated their veggie schmear until it was that or plain. (I mean there was also Strawberry, but 🤢)
I’m not asking for all of the sandwiches and gourmet options. But, surely we can get more than 3 schmears out here. Onion & chive? Country pepper? Something.
I lived in Minnesota for too many years, but always loved Einstein Brothers with my Caribou Coffee in the mornings.
I had never had a bad experience at the dozens of Einstein Brothers until today. I mean, it wasn’t bad. It just wasn’t worth driving the extra 4 miles. And I drive 143 miles when I have to do “grocery shopping”, because HEB doesn’t treat Williamson county like 2nd class citizens.
I didn’t miss Einstein Brothers until now. Now that we have one… I miss Einstein Brothers.
And if I’m going to drive all the way to Austin or Bryan for something to eat, I’m not going to select a fast food chain.

Updated: At the same time I posted this, someone posted the following… I’ll just wait on the new location…
Coming soon to Bastrop at Highway 71/969!
There has been a lot of activity & chatter- here's the info!
* Dining options will include a Chuy’s, Jersey Mike’s, Einstein Bros. Bagels and a Texas Roadhouse—which is expected to open in the spring of 2026!

If you like einstein bagels, don't come here. The employees said that the bagels were fresh, but they were already hard @6:30 AM. I'd rather drive to austin to get real einstein bagels.

Used to be good when they first opened. Now, it's almost never open, as you can't get an employee to help or make anything. Sometimes they have a bag of bagels available to go, but I wouldn't risk how long they sit in the basket. Not worth even attempting to go here anymore. They ought to just close it.

This place a joke. They don't have like anything available that is on the menu and when we got bagels with smear(since that's all they had) it was a super light layer that practically disappeared by the time we got home. This location is the worst.

Inside Pilot gas station usually only open in the mornings. Always good for breakfast stops
Literally the worst bagel experience I’ve ever had
DOES NOT EXIST. There is supposedly one in a Pilot about two miles away and it also DOES NOT EXIST.
