The last two times I went in there, I had the same employee make my sandwich. I asked for pepperjack cheese both times and both times it was made with American cheese. The first time, I just went with it. The second time, I asked if that was pepperjack and he insisted it was. Im pretty sure pepper jack cheese is white and ironically, has bits of peppers in it. This was my first time going to a Subway, and I sure was impressed! The food was really tasty. However, I got bamboozled by a big sandwich sign in the store and thought it was a real one so I took a bite.
