Best of both worlds, great good & customer service! My little family and I traveled to San Antonio to try their BBQ & believe me, it did not disappoint. This place is definitely a must try when visiting San Marcos. We'll be coming back to Hays very soon with more of our friends & family.

My dad was craving for some Texas BBQ so we ended up trying this spot on 4/4/24 since we were in the area. First off when we arrived at noon time the parking lot was almost packed and all of the car parked there are the Ford trucks. We almost couldn't get a spot. What's will all the big ford trucks here? Now for the food. This was our first time trying the BBQ from this location. When you first enter you pick up a tray and select the sides and desserts before you head over to the counter to get your meat, drinks and to pay. We ordered the following: - 3 servings of potato salad = $2.99 each - 1 serving of jalapeño cream corn = $2.99 - 1 serving of beans = $2.99 - 1 serving of cole slaw = $2.99 - 1 pie = $3.69 - Sausage = $4.49 - Sausage = $4.49 - Turkey (0.480 lbs) = $9.12 - Pork Ribs (1.66 lbs) = $20.13 - Brisket (0.550 lbs) = $16.50 I didn't notice the 2 total prices on the receipt. They charge $3 more if paying with credit card. Our total came to: $82.66 (cash) or $85.14 (credit card). I'm not much into the brisket and the pork rib. I tasted a little bit of it and it was good. My dad liked the pork rib and thought the brisket tasted ok. I liked the sausage. It wasn't oily and tasted good. My uncle said the sausage to him tasted kind of dry. He liked the turkey. Potato salad was so good, this was the highlight for me. The cream corn with jalapeño was so spicy, I couldn't eat it. My mom said the beans lacked seasoning. She added salt to it but the flavor still lacked though. Overall, food was good and service was friendly and quick.

Best bbq I have had. The hatch green chilli Mac and cheese is the bomb. Don’t leave without trying the sausage either! The owner was awesome and even showed us the pit and process. 10/10!

Great food!! We ordered our food to go at the main register. Where we were able to watch our food get sliced and weighed. The service was great. They had a super friendly staff. The brisket was tender and well smoked, turkey was moist, chicken was falling off the bone, sausage links were a good size, and the pork ribs were tender. Everything we ordered had a nice amount of smoke along with good taste and texture. The Mac & Cheese was super tasty, and so was the strawberry short cake and chocolate pudding. My only drawback was with the chicken. Even though it was falling off the bone and tender, I felt it lacked a little flavor and had too much cracked pepper. Otherwise, the chicken, along with all the other food, was delicious. If you're ever in Kyle, I recommend Hays County BBQ.Parking: Tons of parking available here with easy in and out accessWheelchair accessibility: Flat entrance for easy access from the parking lot to the main doors.

Definitely worth a try, and im going back for the rest of the menu. Went on a weekeday for diner and plenty of tables to sit at. Cashier was helpful about the items. We liked the coleslaw because it wasn't a sour/vinegar overwhelming taste like others, this was a light but still flavorful slaw. Pork ribs fell off the bone and tender enough for my wife to eat when she has braces. Brisket was good as always. The sauces on the table has a small spicy kick but still good. Overall its a spot i'd go back to. Pound of Brisket, pork ribs, sausage link, mac and cheese, coleslaw, potato salad, green beans and 2 drink was about $80.

Hays County Bar-B-Que & Catering ReviewHays County Bar-B-Que & Catering in San Marcos offers a pleasant and casual atmosphere with friendly service. While the brisket wasn't the most flavorful I've had, the ribs were excellent and the pecan pie was delicious. The sides were average, but the overall experience was very good, earning an 8.5 out of 10 rating.Highlights:Friendly serviceExcellent ribsDelicious pecan pieOverall:A great option for casual barbecue in San Marcos, with something to satisfy most appetites.

Staff was really nice and gave us samples since it was our first time. Great approach bc it convinced me to buy turkey, which I never buy at bbq places. Their turkey was my favorite. Ribs and chicken were good, but a bit too peppery for my taste. Brisket was pretty good, but felt like it needed to cook a little longer. The bark was great, though. Their twice baked potato casserole was awesome! Was too full for dessert, so no opinion on those.

This place is awesome!! I have been to just over 30 of Texas Monthly’s top 50. I am betting it now, Hays will be in the top 10 in the next list. Brisket was amazing, and the rib was truly elite, top 1-2 I have had anyplace. On top of that the owner Aaron and the crew are awesome. Local people who are just the kind of folks you come across and root for. If you are around the area or get a chance to build it into a fun day trip, make sure to get here as part of it! top of list bbq and top of the list people!

Had the best experience at Hay’s this past weekend. Staff were patient, kind, and extremely helpful. It was our first time stopping by and they were patient while answering all of our questions. The food was the star here though! You can really taste the love and passion they put into their food and the portions are more than filling. Don’t skip on the Hatch Chile Mac and Cheese, it punches a kick and leaves you wanting more. Can’t say enough positive things about our experience here. Also, don’t forget taking some Banana Pudding for the road. So good!
