“Why isn't there a line?” was the first thing that came to mind as we pulled up to LaVaca BBQ Saturday morning, about 20 minutes before they opened. It's usually a bad sign when a joint on the Texas Monthly Top 50 doesn't have a line waiting for the doors to open, but I had just driven three and a half hours to get there and I wasn't going to leave with an empty stomach.
