I'm a huge fan of Oaxacan cuisine and CONMOLE did not disappoint! The mole guajillo with pork ribs was excellent. My only suggestion would be: if mole is the pride and namesake of the restaurant and serving as a gateway into tasting more of Oaxaca, why isn't mole even more of a star? What is mole, what makes it so complex, and why is it so special to Oaxaca? I know how much work it must take to make your mole pastes - I think there's even more of an opportunity...
This restaurant was an amazing experience. The empanada was delicious. It was baked instead of fried, which allowed the flavor of fresh bread to shine. The mole was unique with a chocolate sauce base that was unique and tasty. The chocolate tres leches was rich and moist with nice rich chocolatey flavor. Staff were friendly and attentive and extremely helpful when choosing what to eat. I would come here again

Mole Negro Chicken was novel for me. A chocolate sauce on chicken is an interesting combination.
Guajillo mole costillas is pork ribs in sauce. More conventional.
Both dishes were good in terms of meat and flavor. Portion sizes felt small relative to the price, but I'm glad I had the experience.
