It’s a no for me. Expensive and my first two bites of my brisket sandwich were mouthfuls of fat - not a way to win me as a customer. The sides were bad. Couple bites of each and both went in the trash.

These folks know what’s up. We tried them out for the first time last night and I assumed it would be amazing based just on how good the smoker in the parking lot smelled. I was right.

The experience was awesome from the time we walked in the door. Friendly, accommodating, staff. Easy to read menu system. Even a self serve station to take home some of their house made barbecue sauces. There’s plenty to choose from!

We ordered food to take home: a pulled pork sandwich, one of the specials: the pit beef sandwich with horseradish sauce and onions (they subbed the raw onions for pickled onions for me, highly recommend,) the Brunswick stew, pimento mac and cheese, the brisket, smoked deviled eggs and jalapeño cornbread with their house made compound butter.

Not one single crumb disappointed. The food traveled well, was still hot when we got home, and the portions were more than generous. I waited a day to leave this review just so I could also confirm leftovers reheat just as fantastic as same day.

Finally found a fantastic local bbq spot! My husband and I ordered brisket, pimento Mac and cheese, and green beans, and the owner threw in baked beans, coleslaw, and pickled veggies for free since it was our first time! Everything was delicious. Brisket was falling apart with a fork. Homemade bbq sauces really hit the spot; sweet heat was my favorite. Baked beans were the best. Everything was good and we will be back!

some of the BEST bbq in fredericksburg! customer service is amazing and the food is SOOOO good 10/10 i’ve been recommending people all the time! a bit on the pricey side but it’s definitely worth the price! i had the brisket cheesesteak and literally wanted to give all the staff a hug because it was soo good

Traveling through Fredericksburg VA and read about Wild Waylon's BBQ. It was worth the stop! The BBQ brisket and pork sandwiches were delicious. The meat melted in your mouth. The beef rib was huge and tender. The coleslaw and pickle were crunchy and a nice addition to the sandwich. The potato salad was yummy. The pimento mac and cheese was good too. Lots of BBQ sauce selections. Definitely recommend.

Tried Wild Waylon’s BBQ for the first time yesterday and I was blown away!! We had the beef ribs, brisket sandwich, pimento Mac and cheese, green beans, and deviled egg potato salad. The sides were all fresh, flavorful, and delicious! The 6 BBQ sauces are all made in house and offer a wide variety of flavors! All were delicious! The brisket sandwich was fantastic, moist and flavorful meat, great bread, and well balanced by the coleslaw and pickles! The real star of the show was the beef ribs, massive, very meaty, and perfectly smoked! The meat fell right off the bone and was so delicious! After recently having phenomenal BBQ in Austin, TX this was a happy find so close to home! Honestly the BBQ here at Wild Waylon’s was even better than the BBQ in Austin! Cant wait to come back and try some of their other specials and chicken wings!!

A gem! Everything is made in-house, meat cooking outside, big portions, tons of their very own sauces to try. Had the pork bbq and a (massive!) smoked chicken salad sandwich, sans pimento cheese, on locally baked bread. All had great flavor and tender meats. Good selection of bottled sodas. Desserts looked amazing. 10/10 will be going back again and again.

Wild Waylon’s BBQ has the best brisket sandwich and mac and cheese! It’s family-owned, and the owner personally greets you with great service. This is my second visit, and I drive all the way from Manassas because the food is that good. Haven’t found better brisket anywhere else.

It was absolutely outstanding. My wife and I stopped by for the first time tonight after driving by multiple times and never stopping, but I was craving some BBQ, and luckily, my pregnant wife was craving it also, so I got lucky and got some BBQ! From the second we got inside, the owner, I believe, was super friendly, outgoing, and just all around a cool guy. He was very family-friendly, like you knew him for a while.

We both got pulled pork, which came with pickles and slaw. We got the slaw on the side and pickles on the sandwich. We also got two pieces of Mac and pickled onions and jalapeños. All I will say is that it was absolutely delicious! I was stunned by how good it was. I didn’t even put sauce on mine, just picked onions and pickles, and it was gone, probably about two minutes, and I went back for another sandwich to go, plus a brisket sandwich to go, and I’m not ashamed 😂

I’m not going to complain about the price because, in my opinion, you can’t put out excellent food like that with low prices. I was lucky enough to see them cutting up some meat in the back, and it didn’t look cheap. I honestly think Misson BBQ is more expensive and tastes like dirt, and I would much rather support a small-town smoker than a multimillion-dollar business.

Overall, my wife and I will definitely be coming back! I am a lifelong customer.

I recently tried the brisket from Wild Wayland’s and wanted to share my personal thoughts. Right off the bat, the packaging was a bit unconventional. It came in a grocery-style bag, and although there was parchment inside, it absorbed a lot of grease and left the bag soaked. That took away from the professional feel.

Flavor-wise, the brisket had a smoky essence but lacked the depth of smokiness I was hoping for. It leaned more on the greasy side and the texture wasn’t quite as tender as expected, and there wasn’t much of a bark to really showcase the seasoning.

On the positive side, the staff were friendly and welcoming, and the sauces were solid. My favor was the spicy garlic and nashville hot.

Overall: A decent experience with good potential, but the packaging and seasoning could be tightened up for a stronger impression. I lived in Texas for a number of years and so my personal thoughts about texas style BBQ has maybe caused my taste buds to be rather critical of a quailtiy smoked meat. It’s also possible that they do not specialize in Brisket, as much as, their other meats so I would say it’s worth trying for yourself!
