We’ve been to this restaurant several times as locals and have always enjoyed the food. Unfortunately, the service has consistently felt off, and this last experience left a particularly bad impression.
We didn’t have a reservation, so we walked in and were greeted by a staff member standing next to what appeared to be the manager or owner, who was on the phone. She kindly offered to check with him about availability. When he got off the call, we were standing directly in front of him, but he didn’t so much as look up or acknowledge us. Instead, he asked his staff what we wanted and, without making eye contact or addressing us directly, said they were fully booked.
We left, but something didn’t sit right. I checked Resy.com immediately after and saw several open time slots within the next 15–30 minutes. I considered going back in to clarify, but at that point my husband and I agreed we weren’t about to dine somewhere that made us feel so unwelcome.
It’s disappointing because the food is good, but hospitality and respect matter just as much, if not more. We had hoped for better, especially as returning customers.

Food, service and friendly staff made for a wonderful lunch. Especially enjoyed our chicken (Thai) salad dish, plus the Labneh dip. Exquisite.

Friends recommended we eat here while in Middleburg. I don’t know why I didn’t expect it to be so good, but I was so pleasantly surprised! Every dish was well thought out. The service and the wine were as exquisite as one could hope for. We only have one more night here and I’m seriously considering returning. Also, do you self a favor and order the pan con tomate!

A middleburg gem, perfect for happy hour tapas or a multi-course dinner w a great drink list for pairings. Modest atmosphere but elevated dining. Joe is an awesome host and helps navigate your cravings with spot on recommendations.

Food and wine were excellent. My favorite had to be the shrimp roll. Shrimp is cold tossed and a yummy herb dressing in a warm roll 👌🏾

If you’re staying at the Salamander and need to change up the food, look no further than Tremolo. It’s small dishes that are fantastic. Would recommend the stracciatella, the lamb ragu and the Moroccan carrot salad. Both were fantastic. The staff was great and super friendly too. I started with a cocktail — a bees knees — and for my second drink switched to wine. The server made a great recommendation for a light red that went with everything.

The staff here are, unfortunately, very rude. What a pity, because the food and drink looked very good. Their attitude made it an unpleasant experience visiting this place. I enquired as to whether a table was available for lunch on Saturday. I had not booked, since I was visiting Middleburg for the first time. Two wait staff were openly sneering and dismissive and it rather spoilt my day. If the restaurant is booked up days in advance then that's great, but any restaurant must remember that politeness costs nothing. I would never go back.

My sister and I have been coming here since it opened and have enjoyed every bit of this place -- the food, the wine, the cocktails, and the atmosphere. I recently brought my husband here and our server, Joe B., did an excellent job! We ended up getting an off-menu crafted cocktail, the yellowfin tuna crudo, and a glass of Albarino. It was the perfect small plate, and exactly what we were wanting on a warm sunny day. This place is on the pricey side, but well worth it!

Tremolo is absolutely one of my favorite spots. The food is exactly what I want, I am always in the mood to be there. Every dish I have had is a hit. The service is easy, always great. They are bringing in such great quality ingredients to work with and creating unfussy, yet super dialed in plates from a place of knowing what's out there- feels fresh in vibe and style, great music, relaxed atmosphere. AND, they make it all look easy. Love it!
