Peter changs is the most authentic Chinese restaurant that I know of. a close second would be Full Kee on horsepin off of broad.
but P.Cheng's is a combo of traditional grandma like made hot pots with a twist of today to some beautifully created food art type appatisers. the scallion bubble packed is a delightfully fun munch.
