Utterly mediocre. I got a chori-pollo that was entirely devoid of flavor. Refried beans straight out of a can. Par-boiled unseasoned rice. Shallow chip basket for a table of six, and low quality chips that might have come straight out of a bag of tostitos. It was like the chorizo had been boiled. Thoroughly mid.
We found this place on Happy Cow when I was looking for vegan options in Staunton. It looked like they could do a few things with vegan options. But ... most of those couldn't be made gluten free. And since I'm both, it was difficult to find something that worked. Ultimately, working with the woman taking my order, we came up with a bowl with the sauce removed and subbed guacamole for the regular avocado instead. This bowl said that it has quinoa in it on the menu, but I was hard pressed to find any. Because of it having no sauce, it wasn't very flavorful. It could have used some beans of some sort also to bulk of the protein and fiber content so that I was more satiated. Overall, not my favorite find of the trip, but it was better than the alternatives, to which I couldn't really find any. I did appreciate that they tried to find something to fit my dietary restrictions though. So they definitely deserve kudos for that!
My lifelong friend/sister introduced me to her friend, Sarah, who owns Baja Bean Co. Before getting into the wonderful dining experience that I had at Baja let me just say a few words about this beautiful lady of joy. As she walked towards me, the light and energy around her was so bright I felt that the sun itself was coming to meet me. She greeted me with a warm hug and a smile that lit up the neighborhood! As a soulpreneur/seelsorger I have been with many healing people in many healing spaces and I can promise you that you will have a calming, healing experience in her presence in this space. This seemed to be known by all of the occupants as each person that entered was welcomed unconditionally as family and the atmosphere felt like a loving home. Now to the food...OMG...the food!!! Every single bite was perfection! It is all made from scratch with fresh local ingredients and unique tweaks that cannot be found anywhere else. The flavors are beautifully balanced and decadent. This is not your average Mexican fare. I could eat the homemade guacamole at every meal. I had the falafel tacos...mouthwatering!!! Then...yes...then...even though I was stuffed...I had to try the fish taco...and yes I ate the whole thing because it too delicious! (AND THEY OFFER LIVE MUSIC!!!!) If you are in the Staunton area do not miss a visit to Baja Bean Co and if you are not in the Staunton area....get there! The experience will soothe your soul, calm your spirit, bring joy to your heart and bliss to your belly!

My girlfriend and I came a few days ago. Possibly the worst “Mexican food” we’ve ever had. My girlfriend is Mexican, and she said the food “personally offended” her.
The rice is not Mexican rice, it is instant white rice (I’m not kidding, no tomatoes, no color, nothing). Beans were CLEARLY Canned. They looked like British WW2 rations. If you’re gonna have the word BEAN in the restaurant name, you should probably make them yourself! See attached photos.
Walmart tortillas. Not even warmed. If you’re not gonna make your own tortillas you could at least put them on the skillet. Maybe the chef skipped this step for me because I’ve never heard of serving cold tortillas.
My girlfriend bit into her chorizo chimichanga, and immediately said “this isn’t chorizo” without even looking inside. For those of you that have never had chorizo, it is red. When we opened her chimichanga, our meat was grey and ground?! It was more than likely ground breakfast sausage, definitely not chorizo.
I’ve had some bad food, and there’s nothing wrong with that. Maybe the people that run the place got inspired by Mexican culture and cuisine, and wanted to imitate it. I can understand that. But you should probably have enough respect for the culture to LEARN how they make the food.
I’m not kidding, we sent pictures to my gfs family and they were appalled, and started calling us. I don’t know Spanish yet but I don’t need to know it to understand that they were offended and even laughing.
We wouldn’t have been so upset, if our 2 meals and 3 drinks didn’t come out to an insulting $78.
The good: atmosphere is nice. Restaurant is very clean. I really enjoyed the drinks and my gf loved her marg.

Horrible... they're on probation and even if you're not going to drink alcohol they ask you for your ID. There's a lot of places where is not required to give an ID if you're just eating or drinking not alcoholic beverage. The environment is nasty and smelly. They had dirty cups on empty tables.
About the response... the first thing we were told by the employee was: We're on probation. So you must be in trouble or you can be discriminating us for be hispanics and then you were trying to make us leave. But that's what we were told yesterday...

Love the food Baja!
But pleeeease find some consistent times when you're going to be open and then make those clear on your website, your phone message, on Facebook, on Google, etc. etc. I'm only actually able to get food from you when I want it about 25% of the time because the website has incorrect information or because you're randomly closed when everything electronic says you're open.
But don't change the food!
