Great food, all sushi is made to order.
Fish is fresh, there's a bit of a wait, but it is worth it and understandable.

We walked in on the Friday before Christmas and there was one person at the bar and a couple at a table. We proceeded to wait at the host station for a few minutes while the server talked with the couple. I decided to go to the bathroom while we waited. When I got out of the bathroom, the server was still talking to the couple and my husband was still waiting at the host station. The server was facing the door the whole time, so plenty of opportunity to stop her personal conversation and at least greet us at any time.
We then decided to sit at the bar where she handed us menus. Several minutes went by before she took our simple order of a half bottle of sake and 3 sushi rolls. Nothing too elaborate. As we waited for our sake, my husband went to the bathroom. When he returned, he mentioned that someone was in the other stall watching sports news on his phone. Pretty odd. A few minutes after we got our sake, an older man slowly moved from the bathroom to the open kitchen area... clearly the man watching sports in the bathroom. He walked into the sushi bar area of the open kitchen and washed his hands. I guess that's a plus.
It was around this time that the couple and the man at the bar finished their patronage and left independently of each other. We were the only ones in the entire place. We proceeded to sit at the bar for another 35 minutes without seeing the waitress or any food, with the old man behind the sushi bar just shuffling around in slow motion. It was too far away to know if he was making our food or not. At this point, we got up, threw some cash on the bar for the sake we had consumed, and walked out.
Three Sushi Rolls should never take more than 15 minutes. We were there for the better part of an hour. I DO NOT recommend this place. Hard pass...

Hands down the best sushi in chittenden county
Decent sake selection
Note, sushi is cut to order, so it takes a little longer, but it's worth the wait

Out of 4 visits they only served us food 1 time. The other 3 they turned us away despite the establishment being open. Each time they insisted they were too busy despite having only 1-3 groups dining. No clue why they do this but I'd advise against trying to get dinner here. Maybe they Will actually serve lunch.
The hostess did seem apologetic this time and subtly blamed the chef for being unwilling to cook. It seems absurd to be unwilling to serve new customers 3 hours before your restaurant closes.
The one time we were able to eat the food was OK and they gave us the wrong sake.

The sushi was delicious. They were understaffed, and hot menu items were not available, though the server was attentive.

I ordered the Sushi picked by the chef, scallop roll, and a beer. The service was good considering there was one server in the restaurant at the time. I really enjoyed the scallop roll and tuna roll.

Sushi Maeda has fantastic sushi- unfortunately, some of the pricing makes it difficult to justify. $8-12 for a single piece of Nigiri was too rich for my blood. The atmosphere was also odd- my best descriptor would be “oppressive.” A mostly empty room with minimal decor, the silent, uninviting feel of the place sucked the air out of the room for us.
Again, the sushi was great- buttery, generous portions and interesting chef’s choice rolls. However, I’m not sure it balanced the scale of the overall experience.

You would never expect such amazing sushi to be hiding in Burlington Vermont. But this restaurant is excellent, from the food to the staff, it was a 10/10 experience. Will be back, and will be bringing a large party. Lexi was a wonderful server, experienced and obviously knew her sushi. Do not sleep on this restaurant!

Restaurantji Recommends
We tried out this restaurant on a recommendation from of the local business’s in the area. Sometimes it’s hit or miss with sushi places, but this was a hit. The service was great and the sushi was fresh. I would recommend to others if they are in the Church St. Burlington, VT area.

Ordered for takeout and was disappointed, which surprised me considering the all good reviews. I got the hamachi jalapeño, Alaska, and spicy scallop rolls. The rice was extremely over cooked, just mushy and gummy, and unseasoned, which made the rolls (since there was a LOT of rice compared to filling) unpleasant to eat. I think most people expect hamachi jalapeño rolls to be made with fresh jalapeño, but these were made with pickled jalapeños and the vinegar-y, distinct flavor overwhelmed the mild hamachi. I also was surprised by the Alaska roll. It's my go-to order and normally, there is salmon served on the top of the roll as well, so it seemed more like a salmon avocado roll. I liked the filling of the spicy scallop roll; the scallops had a good texture and it wasn't fishy. The girl who took my order was nice. She quoted me 30 minutes for a take out order that I placed in person, which I thought was a bit long considering they had been open for 45 minutes at that time, there was no one inside the restaurant, and it was just 3 cold rolls.
