The smash burger was great, but the rest of our food (poutine/crepe) was not very good at all. They also were running out of a lot, which might have had to do with the fact that they were closing in half an hour of when we arrived, but there was no signage to indicate that the kitchen would be closing at 7, and the website only indicated they were open until midnight. If we didn't just happen to want to get food as early as possible it would've already been closed. They were out of both Nutella and cheese curds which made us change our order. All in all, very frustrating and we didn't enjoy 75% of our overpriced meal

Food is hit or miss. Service Hit or miss. The BTV Airport has allowed the monopolization of a single food service business that has a reputation of mediocre quality food (see reviews to other locations in Vermont and elsewhere). The main issue with the “Skinny Pancake” is that they are working in a bottleneck of a customer base. Flights come and go all day, every day. Once trapped behind TSA security you have no/zero options for food. If hungry or thirsty they are your sole provider. This creates a massive bottleneck and you must endure the masses of customers ahead of you. The kitchen is either taxed /out straight or completely dead. The employees try their best to meet customer demand, but they are often understaffed and/or overwhelmed. This is a terrible problem for both the employees and customers alike. In all fairness it’s most likely NOT the employees fault. This is an administrative issue, an operational issue and a misguided business model. Imagine working in a place where kitchen temperatures can soar during hot weather because of poor HVAC design. A place where you are constantly enduring and endless ebb and flow of overcrowded hungry and often frustrated travelers who are primarily stressed out. Why? because of TSA screening, delayed connections, and/or travel fatigue. They are not willing choosing to dine at this establishment. They are required to do so because of monopolization.plain and simple.
The food has to be scrutinized and screened, the workers are as well. They are required to pass through security. Ive heard that once reporting to duty they cannot leave the confounds of the restaurant until their shift is completed. I’ve heard of failing equipment and supply shortages. I’ve seen frustrated guests not get their food before their required boarding time. Who is to blame? The airport? The Restaurant? The business model? Pick one or all because it’s an agrimation if all of it. I’ve seen a single bartended attempt to service a room full of 100 people. Would you order drinks and food at a bar where you have only one choke pint of getting your oder in? On time, under the ticking clock of your flight leaving? Hmmm maybe not. Whoever is allowing this company to operate in the broken business model should be ashamed of themselves. I’ve heard of employees getting their tips “stolen” by the company’s CEO and not “tip shared”. Some bartenders have quit after years of being able to work a livable wage to have the hard earned money put into the corporate pot. I’ve heard of unreliable equipment in the kitchen, bad crepe burners, overheated walk-ins, massive food waste due to failed equipment. Overworked and underpaid staff. These conditions and circumstances make it impossible to deliver consistently and efficiency. I also heard of other more streamlined professional food service providers wanting to enter the market at the airport. Maybe it’s time for a change? That’s the skinny on the “Skinny Pancake” Eat at your own risk ⚠️

Great bar/drink service, but do not order any food that has to be prepared unless you have about an hour to wait. They don't really get busy, it's just extremely slow.

I’m not sure why Skinny Pancake is the ONLY food option at BTV, but I still find myself surprised by this statement each time I fly.

The food is just not good. The crepes are thick and taste like bad pancakes rolled up. You would think a company built on crepes would actually make good crepes. You would be incorrect.

If only there were more options. The lone bright spot is the staff is very nice and friendly. But they are stuck serving gross crepes.

I had a great salad this afternoon at the airport today from The Skinny Pancake.

Mixed greens, butternut squash, raisins, apples, toasted pumpkin seeds, and a bit of feta cheese.

It was fresh, tasted great, and a very friendly staff. Thank you!!
