I think if anyone knows what good Mexican food tastes like or is from a place with good Mexican, you won't enjoy this place. I've tried various times on the menue and while the service is super awesome, the food is not good and lacks flavour. Lots of people love eating here and I am hesitant to give poor reviews to any local eatery but their food is pretty bland.

We had an absolutely abysmal experience at the Mad Taco. As a tri state area native, I recognize good quality food and drink, and what that can sometimes cost. At the Mad Taco you’ll get a bad margarita in a pint glass, for $15-$18 dollars, and be seated in either a fluorescent-lit ‘dining room’ or a bar top covered in grime and grease. The wait staff were unfriendly and un-attentive. After we ordered our food (at a take-out window, no less) and then sat at the bar, we were served about 10 minutes later and our food was handed to us wrapped in tin foil, without any plates or silverware. And we DIDNT order it to-go. We didn’t get any plates or silverware, had to get our own plus condiments at a separate area in the bar. And the burritos were so bland, mine was cold, and about $18 each. For the five of us, 3 of which got burritos, 1 who got tacos and another who got a sandwich, plus 4 margaritas, the total was about $200. It was laughable considering we all come from the NY are and have paid those prices often, but for ACTUAL food and drink service in legitimate restaurants. Best of all- they have an automatic 15% gratuity built into the final bill, which is absolutely obscene considering how poor the experience was. Avoid this place as best you can.

Probably some of the best tacos I've ever had and the atmosphere is very cozy, but if you want budget-friendly tacos, I would say this is not for you. $16 for two of most their taco pairings. I recommend trying it for sure.
We love The Mad Taco! A must stop every time we are in Waitsfield! The smothered carnitas burrito Christmas style and the pork belly tacos are delicious!
2024: absolutely delicious: large tacos filled with meat and flavorful ingredients; 2 tacos were enjough for me after a day of skiing in power.Smoked pork & kimchi was out of this world.Pan-fried Fish & pickled vegetables was phenomenal.Ground local beef with pickled onions and vegetables was absolutely delicious.Many gluten free options including Stowe High and Dry cider.Cool atmosphere.Excellent service.Really great music.I love this place! They now have 3 smokers working to make u believable meat!2020: Absolutely amazing! Pork belly taco amazing, dry cider, gluten free! Love it!!!This Mad Taco smokes meat right on premises and it's so delicious!!Dietary restrictions: Gluten free options
I left with a full belly because the food was good and I was hungry. Even though my second taco was soggy by the time I got to it, the flavor carried me through. I am a slow to moderate eater, and the taco I got was the pork kimchi (pretty hefty in size) so that should allow you to approximate your eating time and the likelihood of a soggy taco. The tacos, I repeat, do not come soggy, and I'm not really sure what the staff would do if you asked for a soggy taco. That brings me to the counter-waitress: she was extreamly friendly and helped my indecisive relation. We ate at a table although there wasn't an indoor tabel available immediately because they were a lot of people there. I think there were probably a lot of people there because a lot of people looked like they came from the mountain and the mountain makes you hunger; and the food is really good. My pork was super tender and the kimchi added a nice spice even before I combined their level 3 and 6 hot sauces. I guess that makes it a level 4 & 1/2 hot sauce that I used.

Kind staff but the chicken was too tender for my liking. I like a good resistance to my chicken, a good and hearty chew, but this was far too tender my for quality dentures.
