The Yaki-imo brulee is my absolute favorite and my go-to. Overall the soft serve is just amazing, but the slight sweetness and flavor the potato gives it is a level up for the ice cream. I’m super sad this places closed :(
I recently visited Indigo Cow in Bellevue and tried their Hokkaido ice cream with the sweet potato crumble, and it was absolutely delightful! The Hokkaido ice cream had a rich, creamy texture and a subtle sweetness that felt indulgent without being overpowering. Service was great. Everyone liked their soft serve but me. To be fair I ordered the matcha because I figured it's one of their specialties so I should try it. However, I don't really like matcha because I think it tastes like I'm eating grass. To other people they may really love it so I stuck with the 5 star because it's not their fault I don't like matcha. Next time I'll try something else.
