I Can't Believe it's Bread (formerly Wildflour)

I bought dinner rolls (and several other items) to take back to NC with me...I threw them in the freezer in March 2025. I just pulled them out July 2025 and they are amazing! I thought all that time in the freezer would ruin them but thankfully they just as delicious as I remember. Please expand to Raleigh NC!!!

The best gluten free bread I have ever had. This place makes gluten bread great again. The bread is not dry like most gluten free bread you get. The business employee are nice and friendly.

First time here and the focaccia is CRAZY good. Will definitely be coming back

Absolutely delicious! I tried the baguettes, cinnamon rolls, muffins, and focaccia—and every single item was incredible. You’d never guess it’s all gluten-free! On top of the amazing baked goods, the staff were genuinely kind and welcoming. Highly recommend to anyone—gluten-free or not!

Just about everything is frozen (which is understandable given how quickly GF stuff goes bad) however don't plan to come here to grab much in the way of items for a brunch the same morning.
Otherwise, there is quite a variety of items and the couple I tried were pretty good. The freezer could really do with some labels on the outside, otherwise you just have to stand there holding the door open and rifling through stuff to see what they have, especially if you've never been before.
I also heard they are changing their name from the cute "WildFlour" to "I Cant Believe It's Bread" and I think it's a poor choice that they should've done a focus group on before deciding. First one is cute, whimsical, gives you the idea it's a bakery, etc... new name is off-putting, an entire sentence, and associates it with hydrogenated vegetable oils that Big Food marketed as a health product to sell secondary processing products decades ago🤷🏼‍♀️

If you're looking for delicious and trustworthy gluten-free baked goods, look no further! This bakery is a gem. The owner's passion for gluten-free baking is evident; they personally walked us through all the options, patiently explaining the ingredients and answering our questions. We appreciated the time they took with us. We purchased the gluten-free pizza dough, hamburger buns, and cookies, and everything was incredibly tasty. It's rare to find GF baked goods that are this good! We're already planning our return trip. Highly recommend

This is the cutest place, with the nicest employee(s) :) the bread is actually gluten free (completely) and it is all so moist and quality. This is a perfect place to get gf items if you are eating by yourself or entertaining. I plan on coming back here again.
