Burnt Side Down in Bellingham was amazing. I ordered the grilled cheese with bacon and it seriously exceeded expectations. The cheese crust on the outside was so delicious — perfectly crispy, golden, and packed with flavor. The bacon was cooked just right and added the perfect salty crunch. Simple comfort food done at a really high level. Great atmosphere and friendly staff too. I’ll definitely be back for another one.
It’s no coincidence that this place earned Best Food Truck in 2024 and 2025. I absolutely loved my Italian Stallion with crispy cheese spilling out of it. They allowed me to substitute the rosemary bread. One friend got their original Burnt Side Down sandwich, another got the Send It. All were fantastic. The side of tomato soup was perfect. I highly recommend!
Great place for grilled cheese sandwiches 🥪 of different varieties; had the grilled cheese jalapeño poppers and it was tasty;

Inside was nice and soft
It’s a food truck but plenty of standing tables and next to Stemma brewing and you can eat in there with seating
