They're soft and fluffy and puffy, served with a side of honey for drizzling. Two per serving. Sopapillas are one of many foods that New Mexico can call it's own "The New Mexican Quick Bread" People call them little pillows. Their history is over 200 years old, originating in the Albuquerque, New Mexico area.

Green Enchilada Sauce (Med-Hot)

Our version of Green Enchilada sauce is made with Hatch Green Chile in Medium Hot flavor. We cook the Hatch Green Chile with our Southwest seasonings, chicken bouillon and simmer it in corn oil and is thickened with corn start. Ok, sooooo... Truth be told I had zero expectations of this place. We are California Mexicans, new to the area, and were looking for a good tamale shop ( and quite frankly, there aren't a lot of options ). We saw that this was a New Mexico style, which we had never heard of. The food that is served here is divine, fills the soul, and caters to any special dietary need! The tamales are out of this world, and the beans and rice cannot compare and their flavors will make your taste buds explode! Recommend this place to anyone, the staff are so kind, and the owner is super considerate!

I’ve lived in Bellingham for four years, and been to most restaurants in town, and this is by far the best southwest/Mexican food restaurant that I have had in the whole area! That is not even getting to the amazing part of the community that the owner, Dora is! Literally the kindest person ever, who I could come back to the restaurant a hundred times just to say hello to!
