So I'll add another great review with one caveat. My son's Colorado was probably the best ever...meat was succulent & delicious. I ordered one of the selections marked 'best served spicy'...& it was the enchilada. Enormous so knew I would be taking food home. Adding sliced Jalapeño peppers on TOP of ANY dish does not make it spicy. Altho it was good I expected the spices to be included in the filling. Lots of menu options so will be back to try others but not one of the spicy options if it means only sliced peppers on top!

Sol is my go-to restaurant in Everett. They are a Pan-Latin/Caribbean place, and make the best Mojitos anywhere outside of Cuban restaurants in Florida. The service can be a bit slow, but not because the servers are lagging--the kitchen is painstakingly careful to make each dish terrific. At Sol, you can go on a tour. Cuba? How about nice succulent Lechon, with black beans and rice, and plantains? Peru? They do a good job of the Peruvian national dish, Lomo Saltado. Mexico? Order a great Chile Relleno. If none of that works, how about a well made Burger? The building is an old brick number with a high ceiling--no strip mall fixin's here. They have a nice private patio for warm days.
