I haven't been to Fiesta Taco in quite awhile. Stopped by to pick my fav items; carnitas tacos with rice and refried beans. The beans are Devine. They have a deep flavor with a hint of smoke. The tacos are simple with a huge amount of flavor. The Corn tortillas that are slightly crispy with a little char on them. Almost like pizza. The folks that run this truck are super friendly. I ordered 3 tacos w rice and beans. Such a bargain at a little over $14.
This place went through a bad moment, but I've been there a few times lately and I can confidently say that they got their groove back! I'm super stoked because they've been my favorite taco truck in town for several years now and they happen to be pretty close to home. If you had a few bad experiences and have been hesitant to give it another shot, i would say you should give them a go.
Stay away from the enchiladas - they were pretty embarrassingly bad - I don’t think they were baked beforehand .., it was like lightly heated up corn tortillas with some chicken wrapped in them witha little cheeses and sauce kind of heated up and the amount a beans and rice was lacking .., I’ve had there burritos and they’ve been good but wow.., and the avocado were pretty brown and lacking .
