I dined here recently and was excited to see they had a bean option for their main entree. They have a fabulous reputation so I was thrilled to see what there take on the modest bean would be. However once I tasted it I could not taste anything besides a distinct Tapatio flavor. It would be strange for a restaraunt of their stature to use Tapatio as the defining flavor of their entree but it was unmistakable. Save your money, by some navy beans, and put some Tapatio on them.

Canlis undoubtedly delivers an environment and level of service that align with fine dining standards. The presentation of the dishes is polished and visually appealing.
Unfortunately, beyond the aesthetics, the cuisine itself is remarkably ordinary. Flavor, depth, and culinary intention are conspicuously absent. At this level, beauty without substance is simply not enough.
Perhaps it is time for a chef who truly understands cuisine, not just composition.

Update: We returned this year for our anniversary and had a different experience. Best parts: The drink pairing was excellent. The pork loin, bread, and desserts were all excellent. Some disappointment: My duck was cold.. and more disappointing than that, the restaurant sold out of the only red meat dish by the time we got there at 630. This left sablefish, pork loin or beans for entrees choices. My partner doesn't eat pork and we aren't vegetarian.. he was very disappointed that we were so limited in options. He did not enjoy the sablefish at all. As it was entree of a $200/ea meal (we got the salad), this may cause us to not return.
It was also extremely loud in the restaurant, we are in our 30s with no hearing impairments and could barely hear anything the staff said.
We had a great experience here on 12/17/24. We've done many other tasting menu restaurants this year in Seattle and this may have been our favorite!

The appetizers, salad, and cocktails were incredible. Unfortunately the vegetarian main courses were rather pathetic. But it is a really great building with a view. Next time I’ll just go to the lounge for the great cocktails.

This is an AMAZING place for a date night or to relax in general. Our server Forest was wonderful, respectful and very kind. We related on a personal level, and I even got to thank the chef that made our food because I thought it was that great. I will absolutely be coming back here. The staff in the front, and in the kitchen were terrific. The service and food was impeccable.

This restaurant is overrated. Food is far from good it’s just acceptable and nothing special. Drinks are good but the atmosphere just feels out of Seattle and just to much people trying to impress, specially when you hear from their server that they charge $450 for the salt pot in the table because people still them! What kind of people are getting all dressed up, paying over 200 for a dinner and stilling a salt pot? Anyways, my opinion is it’s not worth the money.

Love the mid century modern building. This was my first visit and I went solo. I booked an early time, 5:15 and had a window view. Service was amazing. If you work in any sort of service roll, you should visit to see what top service is. Arrive hungry as there are so many more courses than the 3 you order. I'm usually not a fan of service charges but the service here is as amazing as the food, and they don't ask for a tip on top which is appreciated. Free valet only parking.
