This review is long overdue, but the experience left a lasting impact on me.
Years ago, my group of five waited outside Cannon for over an hour. We were fully aware of the “maximum 4 people per table” rule and were actively trying to comply with it. One person in our group doesn’t drink and was willing to stay outside, or we were prepared to split into two tables if space allowed. We were simply trying to be respectful of the rules.
The reason we wanted to visit so badly was because a close friend was visiting Seattle after moving away, and this bar held a lot of meaning for us.
After waiting for over an hour, instead of communicating with us earlier or clarifying expectations, staff abruptly and arrogantly refused to serve us. We were accused—without any proof—of trying to secretly break the rules and “trick” our way into the bar. This was never true.
What made the situation far worse was how it was handled. We were shamed publicly in front of other people waiting outside, based purely on assumptions. No attempt was made to talk to us calmly, explain concerns, or give us a chance to clarify.
None of us are native English speakers. We are all East Asian and naturally quiet and shy. The way we were treated felt deeply disrespectful and humiliating. Even years later, hearing the name of this bar still brings back feelings of hurt and shame.
I understand rules and capacity limits. What I don’t understand is the lack of basic courtesy, communication, and empathy. This experience went far beyond being turned away—it was demeaning.
I hope management reflects on how assumptions and poor communication can seriously harm people.

After getting turned away from a nearby bar for lack of ID, some friends and I randomly wandered into this place Canon—and honestly? The rejection did us a favor.

This bar serves the most outrageously fantastic, creative cocktails in Seattle. Bold, clever, and absolutely showing off (as they should).

The vibe? Classic old world. Moody, intimate, effortlessly cool. And just when you think it can’t get better, there’s an old-timey radio broadcast playing in the bathroom. Yes. The bathroom. Because commitment to ambiance and details matter. The food was delicious, the straws are glass, and the water glasses are crystal. A bit more $$ but worth every extra dime.

I loved this place unapologetically and would 100% go back. A must-visit, no hesitation.

I have visited Cannon many times until now my experiences have always been positive. The drinks are consistently excellent, and the staff has generally been friendly and attentive. It has always felt like a great place to relax and enjoy quality time.

Unfortunately, my experience on the evening of 12/12/2025 was deeply disappointing. Upon arrival, my party and I were asked to stand in line along with several other guests. However, while we continued waiting, multiple groups who arrived after us were seated, while we were repeatedly passed over.

When we politely asked the host for clarification, we were told that we could not be seated, yet other guests continued to be accommodated. At one point, a couple who arrived approximately 20 minutes after us was seated ahead of us. When we asked why, the explanation given was that “people would be sad if someone was left standing,” which did not align with the situation, as we were the ones being left standing.

This experience was especially upsetting because it is not something we have ever encountered at Cannon before. As people of color, it was difficult not to question whether race played a role, particularly since the guests who were seated ahead of us all appeared to be white. While I cannot say this with certainty, the situation felt uncomfortable and unfair.

I am genuinely saddened by this experience, as I have always enjoyed this bar and have many positive memories here. I sincerely hope this was an isolated incident and that steps are taken to ensure all guests are treated fairly and respectfully in the future.

Still, I give 5 stars 🌟 because we really love this bar.

We had to visit this place because of its reputation having also been to Jack Rose Saloon in DC and it lives up to it. Terrific spirits choices. Great bartenders! We had a great time. The only food we got was bread to go and it was wonderful. Great experience

I thought Canon was just okay. Service was not great. We had to make an adjustment on our reservation from 3 people to 4 and the person on the phone was so rude. The server at canon barely checked in on us & drinks were ok.

My fiance and I went here for a few cocktails and had a wonderful time. Our bartender was Brandon and he was wonderful. The whole staff was very sweet and accommodating. Some cocktail bars give off the too good for you vibe and Canon does an amazing job of making it feel like a normal bar with amazing cocktails! Thanks for a wonderful evening!

Canon is truly a one-of-a-kind cocktail destination in Seattle. From the moment you walk in, you feel like you’ve entered a temple of spirits, with an entire wall stacked high with rare bottles and a cozy, intimate atmosphere that makes every table feel special.

The drinks are not just cocktails — they’re performances. We tried the Lawn Boy (tropical and refreshing with papaya and passionfruit), the Cocktail Pho-natic (a playful nod to pho with spices and Szechuan kick), the Campfire in Georgia (mezcal, peach, and applewood smoke that tastes like a fireside evening), and the Angel Face (a beautiful classic). Each was crafted with incredible attention to detail and stunning presentation.

The food menu pairs perfectly with the cocktails — the bone marrow was rich and indulgent, while the tofu buns were soft, flavorful, and a perfect balance to the stronger drinks.

I also loved that they’ve recently renovated the space, giving it a fresh feel while keeping the intimate, vibey charm Canon is known for. It’s definitely a place that makes you slow down and savor the experience.

Whether you’re into bold flavors, theatrical cocktails, or just looking for one of Seattle’s most memorable nights out, Canon delivers it all.

The bar itself is indeed one of the best in the world. The interior is stunning and the menu is very thoughtfully put together. On the other hand, there is always a waiting line and even when you get inside, you have to stand to have a drink until a seat becomes available.
