This is a coin flip restaurant. Has a rotating menu where some dishes (like the squash) genuinely surprised me in the most pleasant way, whereas others (like the short rib) left me disappointed. I recommend finding specific reviews on each dish if you want to eat here. On the balance, though, the experience was enjoyable, if a bit pricy.

We were excited to try this place on a visit to Seattle but we’re pretty disappointed by the food. We got the Heart of Palms, Chinese Broccoli and Octopus. The best part of the heart of palms were the hazelnuts, the rest was pretty bland. The broccoli was, in our opinion, heavy on the char taste and even the confit garlic wasn’t that good. The octopus was presented nicely and the piece was hefty, but the dish lacked balance. The spice from the sauce and the bacon flavour overwhelmed everything.

We were surprised after leaving this restaurant and learning that it had multiple James beard award nominations. We were not impressed. For starters, I think there’s a naming issue both for the restaurant and some of the dishes. There were only a quarter of the dishes on the menu that were reminiscent of Korean food, so it shouldn’t be considered Korean fusion in my book. There was more Chinese and definitely some Japanese on the menu. And the “crispy” or “fried” dishes we ordered (fried rice and crispy squash)- neither of them were crispy at all… The Uni noodles tasted so heavily of shaoxing wine and oyster sauce that I didn’t taste any uni, and the morning glory was basically non existent. The Chinese broccoli was undercooked and very one note (char). Best dishes for me were the scallop rice and the short ribs. Overall while most of the dishes were cooked decently, they were overly salted and single note / simple in flavor.

I don't normally make the effort to post reviews but everything about this place was top notch. Every dish we ordered had a different and unique blend of flavors and was such a joyful ride for my palate. Furthermore, the main reason I'm writing this review is the service! I didn't catch our server's name (we were sitting closer to the back corner on a Sunday), but she had a genuine patience and earnestness when it came to answering our questions and offering her personal favorite recommendations. Totally made us feel at home, and it's sad to say most other servers out there don't share this vibe.

Tasty dishes. Fantastic service. The patio was cold. They provided blankets, which was cozy, but they didn't have the heaters on and they needed to. Spicy rice cakes, the beef tartare, and the scallop fried rice are our favorites.

It was amazing, a really good experience, the drinks are so good I highly recommend this place. The steak it's was so tasty, the fried rice it was so tasty, the only thing was the squash it was too overcooked, besides that everything it was good.

Came in here with friends after my wedding for dinner. Staff were so great at giving recommendations. We were worried that we would make staff stay too late since we had a late reservation. They were very communicative over the phone and in-person. Never felt rushed. They also had complimentary desserts for us for our special day, which was so kind of them. Food itself was amazing too. A particular dish that stands out is the Kung Pao Squash. I would say it's a few steps up from Revel, in terms of food quality.

I have been to Joule a couple of times, both for personal dinners and work team dinners. Love the fusion of the food and the service has been outstanding. Thank you to Brandie for taking care of us and for helping secure a large group reservation!

Joule is one of our faves. Amazing flavors, outstanding service, fun vibe, snazzy cocktails, seasonal menus. We love recommending this place to our out of town guests - I think this restaurant shows off what is amazing about our Seattle food scene. Thank you for everything you do!
We loved every dish we had, especially the crispy rice cakes with chorizo and beef tartare with a spicy sauce. Great attention to detail - flavors, presentation, service, and ambiance. We highly recommend this restaurant for a special occasion (when you don't feel like getting really dressed up)!
Excellent experience dining at Joule tonight. The food was absolutely delicious, and the service was top notch. Our servers went above and beyond to make sure my husband's birthday dinner was special and memorable. We will be back for sure!
Every dish is a fusion of flavors and Joule never disappoints. The service is good, the ambience is cozy and the cocktails are also equally yummy. Must try dishes: Spicy rice cakes, scallion pancake, scallop fried rice, mains: mackerel, lamb and short rib were all excellent. Portions are perfect for sharing and family style.
Tiger (our waiter) was incredible, attentive, full of personality, and just plain funny. The food was EXQUISITE. We bought a copy of Rachel Yang's cookbook so we could replicate the spicy rice cakes.
