Can’t say enough wonderful things about LTD! From the moment we walked in, you could just tell how much thought was put into everything about the space. It was beautiful and so welcoming.
The whole experience, from the chef meticulously crafting each piece right in front of us to the incredible staff making sure we had everything we needed, was so incredibly well done. And the food? Oh my goodness, the food was absolutely incredible! Every single bite was a little piece of heaven. The sake pairing was also a total blast – it was a lot of fun and really made the meal even more memorable.
If you have the chance to go, I would 100% recommend you go! This place is a gem, and you'll leave feeling completely satisfied and happy
Tldr; yes definitely worth the price, lives up to the hype and showed me a whole new level of sushi I never knew existed.

I had the wonderful pleasure of dining here for my birthday and was absolutely blown away by my meal. I don't usually take detailed notes of everything I ate but this dinner deserved that. So below is a breakdown of the entire 2025 summer menu as I experienced it. The chef noted he continues to tweak things so this may change but I'm sure it will be equally delicious. Also service was excellent and shout out to our server with the cat earrings for taking care of us!
Summer menu (all cold dishes) in order of appearance:
- Chawamushi egg custard topped with seaweed: really light and refreshing with a pleasant hint of brineiness
- All locally sourced dish, dashi jello, Rainier cherry, crab meat, geoduck, oyster, fresh wasabi - wonderful mix of Washington seafood with the dashi really complimenting each bite
- Salmon with grated daikon and sauce: the grated daikon may have accidentally been the star for me with so much flavor
- Uni urchin with noodles in tomato broth: really great noodle texture and mixing the uni added an additional layer of richness
- Asparagus with tuna and 6 month aged soy sauce vinegar miso sauce: the aged sauce reminded me a little of black bean sauce and wonderfully complimented the tuna
Sushi/sashimi courses:
- Marinated ginger: technically a side but it was the best ginger I have ever had, no fibers, crunchy, light, well balanced sweetness and acidity and I could eat by itself all day. The entire counter talked about how he should sell this.
- Barracuda cured for 3 hours in kelp and grilled: really wonderful flavor
- Black Sea perch - apparently this is a fatty white fish and it was possibly my favorite bite of the night.
- Fresh spot prawn with sake prawn head sauce: fair warning the prawns were literally alive and jumping around on the table when the chef began preparing them for this course. The texture was really amazing though and I see why this dish is prepared so fresh
- Fatty tuna cheek: unbelievably fatty and melted like butter in my mouth in the best way.
- Sea urchin: apparently there are different grades of uni and this was the highest grade. I didn't think sea urchin could be so sweet and light and not a single bit of ocean brine to it. Best sea urchin of my life by a wide margin.
- Monkfish liver: this liver had such a great texture and once again proved the quality of ingredients makes a huge difference as I have never had monkfish liver this good
- Mackeral: without a doubt the best mackeral I've had as well
- Stripe jack: good but hard to compare fairly against the previous fish
- Handroll with tuna: a really good handroll but I didn't think it stood out particularly after the explosion of flavors we just had
- Snail: really great texture
- Tamago: very light and sweet, excellent way to end the meal
If I had the money I would go back every season. Also they are super generous with the sake so the dinner pairing seems like a great add on.

We recently visited LTD Sushi, and it definitely lived up to the hype. Booking required a bit of planning—I had to mark the reservation opening on my calendar—but once I did that, I had no issues securing a spot.
Everyone starts the experience at the same time, so there's a bit of a wait at the entrance. The crowd was mostly verey young gen Zs and predominantly Asian, which made me feel slightly on the older side—😅—but all good, I was there for the food!
The staff was incredibly attentive. Even though we didn’t opt for the sake tasting, they generously offered us samples of all the different types and shared the stories behind each one. Throughout the meal, they explained every dish with care and enthusiasm, which made the experience even more special.
The food? Absolutely delicious—every single bite. Honestly, though, it was a lot of food for one person. By the end, I could barely get through the last two courses. Some guests ordered more, and I felt like the staff was slightly let down that we were already full—but we were truly satisfied!
We've tried a bunch of sushi omakase experience in Seattle, and honestly, this the the only thst gets close to Sushi Kashiba delicousness. Both are equally fantastic in terms of flavor and service.
My one (small) disappointment: no fried shrimp heads on the menu. I was looking forward to that crispy treat, but everything else was so good, I can’t complain too much. I would totally come back. They said they change the menu every season so I'm looking forward for summer!🥰
I'm no sushi expert so.... take my review for what it's worth, but I've decided I don't need to search for the best sushi I'll ever have because it probably won't beat this.
Please stop wiping everyone’s plate with the same napkin! It’s not sanitary.

Where do I even begin? My partner and I have been talking about coming here for around a year now and we decided to for her birthday.
The entire experience was truly one of a kind. Chef Keiji passion for his art is on display the entire time you’re there. Sitting at the bar is absolutely worth it. Keiji’s conversation and the interactions with everyone else at the bar make it feel like you’re at home and a friend is preparing food for you. Keiji will tell you about the history of the roll, how long it’s been in Japanese culture, where he got the fish from, etc.
The food itself is world class. From the starters to the rolls, everything you try is unique and unlike any other roll you’ve ever had.
Highly recommend the Sake Pairing with your meal, you’ll try several different sakes that pair well with specific pieces and the staff are attentive at making sure your glasses never run empty.
There’s a reason why reservations are hard to come across, but it UNDENIABLY lives up to and exceeds the hype.

I recently had the pleasure of dining at Limited Edition Sushi in Seattle, and I must say, it was an extraordinary experience. The omakase menu featured a series of exquisitely crafted dishes, each with perfectly balanced flavors that delighted my palate. From the delicious appetizers to the freshest sushi, every bite was a testament to the chef's skill and dedication to quality.
Moreover, the service was impeccable. The staff was attentive, knowledgeable, and genuinely passionate about ensuring a memorable dining experience. Their warm hospitality paired seamlessly with the exceptional food.
If Michelin were to expand to Seattle, I have no doubt that Limited Edition Sushi would earn at least 2 stars. It is a culinary gem that stands out for both its remarkable cuisine and outstanding service.
