Breakfast sandwich was tasty and hearty, but the cardamom panela brioche was the real highlight. Defined flaky layers and cardamom-y richness made it a real treat.

Amazing, high quality, worth every penny. Officially my favorite pastry shop now. Thank you for opening near my work but at the same time now im gonna be eating more carbs now… I’ve had south american pastries often but this place puts them on another level. So grateful to have this experience.

Tried this place on a whim and I'm so glad I did! I had the cafe de olla cold brew and chocolate puerquito. The cold brew was pretty good, but the puerquito was outstanding. The salty sweet cajeta filling was just amazing. Customer service was friendly and courteous. Can't wait to go back!

Pan de La Selva provides pastries to Bonito Café y Mercadito on E Olive Way. Bonito's panaderia selection always sounded so good (and so sold out) that I had to go straight to the source.
I got a modest six items during my first visit (plus a drink), and all were good. The particular standout of my selections was the rajas con crema hojaldre, which is savory and gooey, with some outstandingly good puff pastry - pleasantly crusty on the edges, with a stretchy, chewy durable interior. None of the sweet items I got were too sweet, and all tasted fresh. I can't wait to return to Pan de La Selva to try everything else on the menu.
The one problem is that they are open only on weekdays (and close at 3pm), so good luck if have to work during regular business hours. However, some items are available at Bonito Café y Mercadito and Day Made Kaffe Bar.
Pan de La Salva is quickly cementing itself as one of the best bakeries in Seattle. Mayra Sibrian's mastery of traditional Latin American baking techniques combined with some really unique, balanced, and unexpected flavors is on display through every item on the menu. The cafe has three main offerings: beverages, a hot breakfast sandwich, and a case full of pastries.
For beverages, the Salvadoran coconut horchata is a must. It's unlike any horchata I've had before—lightly sweet from some bananas or plantains with a deep cinnamon flavor and a savory nuttiness from toasted sesame seeds. It's incredible. I also tried the tepache which is authentic and tasty.
Next up is the breakfast sandwich which, again, is probably unlike anything you've tried before. A perfectly textured bolio with beans, egg, plantains, and avocado, it's rich, creamy, and just a little bit sweet. Top it with some salsa macha for a little kick and it's perfect. Grab some extra napkins—it's messy.
And finally, the extensive case of pastries. A few of the flavors seem to rotate occasionally, but you'll find a mix traditional Latin America pastries, like conchas and semitas, as well as more familiar offerings like buns, cookies, and cinnamon rolls. Again, everything here exudes perfection, so each item is getting its own spiel:
• Concha: Conchas have a reputation for being dry and bland (which is often the case at some cheaper grocery stores) but not here. Perfectly moist and bursting with flavor from the jam filling, this is everything a concha should be. Dip it in your coffee or horchata for a little bonus.
• Semita: Perfectly flaky pie crust, super flavorful jam, and an interesting blend of salty and savory herbs sprinkled on top. Unexpected in a great way.
• Pumpkin canela roll: Canela is Spanish for cinnamon, but this isn't any old cinnamon roll. The fats and sugars are cooked to an almost caramel-like consistency. The creamy pumpkin topping is bursting with real pumpkin flavor.
• Pan de coco: Lightly sweet until you get to the rich caramel filling in the middle, this one really shines heated in a toaster oven for a few minutes.
• Honey quesadilla: This is probably not what you're expecting from a quesadilla—it's not a tortilla filled with melted cheese. Instead, it's somewhere between a pound cake and a cornbread. It's unbelievably moist, sweet from the honey, and just a little bit savory and nutty from the toasted sesame seeds on top. You absolutely must try this one.
• Chocolate oreja: Not too far from a traditional palmier, but the chocolate and caramelized sugars give it a deep, almost savory nuttiness.
• Puerquito: Adorable and delicious. The cookie is really light and cakey and the filling (which tastes almost like cream cheese, but I don't think it is) is addicting.
• Cardamom-panela bun: It's hard to improve on a classic like this, but they've done it. The panela, an unrefined cane sugar common in Latin America, takes this pastry over the top. It's incredibly moist, not too sweet, and just a little bit savory.
• Chocolate chip cornmeal cookie w/ chili sea salt: It sounds weird, but you gotta trust this one. It starts as the one of the best chocolate chip cookies you've ever had, and then the salty chili flakes on top add a whole new level to it. It's not so spicy that you need to chug a glass of milk (though I'm certain that would pair wonderfully), just enough to further the highlight the richness and sweetness of the cookie. This was an unexpected favorite for me.
Every dish at Pan de La Salva has depth and levels of flavor unmatched by most bakeries. As I understand it, this brick-and-mortar location will only be around until December, so don't miss your chance to try some of the best baked goods you'll have in your life.

This place was SO GOOD!!! I tried one savory and one sweet item - a rajas puff pastry and a hibiscus plum concha. Both were insanely fresh and flavorful. Everything in the pastry case looked so enticing and unique. The space is inside is beautiful too. Highly recommend!

I'd been excited to try this place and it only exceeded my expectations! All the pastries we tried were delicious and the breakfast sandwich was spot-on. Flavors are so well balanced, complex and fun. We had so much trouble deciding what to try, so I'm sure we'll be back soon for more. The space is also comfy and welcoming!

I got a delicious cafe de olla cold brew with soy milk and brought yummy pastries for friends- I'll be dreaming about the chocolate Yaupon Oreja, the mango cinnamon roll, & ofc the passionfruit blackberry concha until I can get mas pan ...WOWEE! I also got to get my sister a really beautiful gift from the artist shelves from the artist Domingo en la Luna, (who I learned from the barista that they also host workshops to make charm jewelry)! I could go on about this place! I will be frequenting! I love this gem & all the humans who are a part of making this wonderful bakery, cafe, art gallery, COZY space! I love how intentional Pan de La Selva community are in curating a welcoming, warm space it feels like home, & honoring Latinx culture & artists!
